Capsicum Rice
Capsicum is a very flavorful veggie.I love adding this to all my North Indian recipes.I have tried capsicum as chutney,fry,in sambar and in tikka items, a huge fan of this vegetable.It takes the recipe to another level.So one day I was thinking why not try this in mixed variety rice.Here it is .....loved the taste.Quick and easy recipe is what we need on these days best for lunch box and perfect for bachelors.
Ingredients
- Capsicum - 3(big)
- Onion - 1(big)
- Basmathi rice,cooked - 2 cup
- Cashew nuts,broken - 10
- Turmeric powder - 1/4 tsp
- Ghee/Oil - 1 tsp
- Salt to taste
- For Seasoning
- Mustard seeds - 1 tsp
- Urad dal(ulandham paruppu) - 1/2 tsp
- Channa dal/kadala paruppu - 1/2 tsp
- Curry leaves - as per taste
- Asofaetida(hing) - a pinch
- To Dry Roast & Powder
- Dry red chillies - 6
- Cinnamon Sticks - 1/2 inch
- Cloves - 2
- Coriander seeds/dhania - 1 tsp
- Jeera - 1 tsp
- Coconut,grated - 3 tsp
- Urad dal(ulandham paruppu) - 1 tsp
- Channa dal/kadala paruppu - 1 tsp
Instructions
1.Chop onion,capsicum finely.Then dry roast the ingredients like cinnamon,cloves,red chillies,jeera,coriander,coconut,urad dal,channa dal separately and keep it aside.
2.Now powder them finely.
3.Heat oil/ghee in kadai/pan and add the seasoning item one by one.Then add onions and saute till they get tender and then add capsicum and saute for 2 more mins.
4.When the capsicum are cooked well add the powder and stir for 2 mins until the raw smell is gone.
5.Now add the turmeric powder and salt and close the lid and keep it closed for a min.Now add the rice and mix it well.sprinkle some ghee on top and remove from fire.
