When you are not in a mood to cook & just want to to rush out of kitchen soon then this dish is your killer choice.Its quick and easy.I love anything that has coconut base so I don't mind eating this everyday too.Good for lunch boxes too.

  1. Heat oil in kadai/pan add the seasoning items like mustard, urad, Channa dal, curry leaves and hing.
  2. Then add green chilies and fry for a min then add coconut and roast them till it turns lite brown in colour then add salt to it.
  3. Pour some ghee and roast cashew nuts separately.
  4. Now add rice to the coconut mixture and garnish with cashew nuts finally.
  5. Serve this rice with papad/appalam.
