Idiyappam/Rice Noodles(String Hoppers)
Idiyappam is a common breakfast dish in Kerala and Tamil Nadu.It is steamed cooked & easy for digestion.Its made of rice flour.All think making Idiyapam is big process but that's not true.If we learn how to make this one lot of variations can be done so less work and more variety.Traditionally its prepared in an elaborate manner since its fast food life right now so I would go with quick making.The end product is the same which ever method you follow.sometimes getting idiyappam flour is not easy in abroad so I tried to explore with plain rice flour and it came out perfect.
- Prep Time : 5 minutes
- Cook Time : 15 minutes

Ingredients
- Rice flour - 2 cup
- Oil - 2 tsp
- Salt - 1/2 tsp
- Hot boiling water - 1 cup or more
- Requirements
- Steamer/cooker
- Idiyapam maker
Instructions
1.Add 2 cup rice flour, salt and 1 tsp oil then mix "hot" boiling water(very important) little by little and knead the dough well,when you poke your finger on dough it shouldn't stick,that's the perfect consistency.
2.Use more water according to the requirement it should look like a soft ball like shown in pic.Now take the idiyapam maker and stuff the dough inside and press it in a circular motion on idly maker plate.
3.Now steam them well for 5-10 mins and remove from fire,they serve this hot with stew in Kerala and with sambar or sodhi or Tomato kurma in Tamil Nadu.

(By the way i took those words in the bracket from the last line of this method of recipe.) And another one String Hopper is the English name for Idiyappam.
