Soya khurma/ Vegetable Khurma(for Parotta)

This khurma is my family favorite. Whenever mom makes it, me and my brother will eat like there wont be any food available tomorrow. I don't know how we can eat that many parotta/Barotta or chapathi but with this khurma as combination,we both can go on eating until we see no sign of khurma in the pan. It goes very well with vegetable biryani or kothu poratta.

  • Prep Time : 10 minutes
  • Cook Time : 30 minutes

Instructions


1. In a pan add some oil then add fennel seed/jeera,roast them for sometime. Then add onion,green chillies,ginger garlic paste. Saute them for sometime then add tomatoes.

2. Now in a blender add all the ingredients that is mentioned to paste and grind them well. Now add some water(1/4 glass)and grind them well.


3. To the gravy add turmeric pow,chilly pow,coriander pow,garam masala and salt. Then add the paste and let it cook for 30 mins or till the oil separates on top.


4. Now in bowl add some hot water and dip the meal maker/soya chunks for few mins. Once they increase in size remove them and transfer it to a cold water bowl,dip them well. Then add this to the gravy and close the lid. Adjust the taste of salt. Then garnish it well with mint leaves. Serve this with hot chapathi or plain parotta.

    Prefect side dish for parottas, i dont mind having this salna with chappathis and rice too.
