Grilled Corn on the cob doesn’t your mouth water just reading this title??? well my mouth does. There’s so much you can do with corn. From breakfast variety to dip to lunch to dinner. Recipes with corn are unlimited and you just have to have some dreamy imagination how all you can mix corn in everything you do.

How to make grilled corn at home easily??

Perfectly grilled Corn can be easy achieved at your own without any problem. Corn is my mom’s fav and I remember her eating this full day. I am not exaggerating she will literally keep eating just this corn for whole day. She loves steamed corn the best but I like this grilled version a lot. I love corn in my dip and my daughter Joshu loves corn soup. Well you get my point right?? My whole family is crazy about it. Only place I don’t like corn is POPCORN. Yes your heard it, I hate POPCORN. I am sure you are thinking I am a crazy women to not like popcorn but I don’t. Never liked even the smell of it. Imagine my position in theatres. Its soo hard and I always keep my nose covered since I can’t bear even the smell of it. Weird right???

Well in India all people love to do is shopping and going to beach. When you think of beach, the first thing that will come to your mind is raw mango(yummy) sliced long and sizzled with chilli powder and salt. Next famous one is grilled corn and I love the way they pour the lemon juice and cover the corn with chilli powder and salt. AWWWW … so yum. My mouth waters just thinking about it. Well it’s actually very easy to make it at home. All you need is gas stove and “voila” it will be ready in 3-4 mins. Some people make it on oven too but for people who don’t have oven, this is a blessing.
I always think of mom whenever I see corn. She passed away on Jan 1st 2016. God I miss her so much. So whenever I see this corn its holds a very special place in my heart. Check other corn based recipes in my blog are corn soup , Corn Chaat , Corn dosa and soon will be posting Masala corn.

Ways to make Grilled Corn

You can either try on the stove straight or you can make it in oven.Take care not to remove the green skin while grilling it on oven. Reason is, it will lose its original taste when the green skin is pelled. You can try making one with skin and one without skin and see the difference.

Other varieties of corn apart from grilled corn-

Instructions

Grilled corn is very easy to make and so much fun when it's homemade.

1. Peel the skin of the corn. I didn't want to hold the corn in hand completely so I used stainless skewers and inserted them at the end of the corn .

2. Now switch on the stove and show the corn directly on fire as shown in pic. Keep rotating the corn to all sides, so it doesn't burn on one side . This will take 2-3 mins. Once done, mix chilly powder, salt and chaat masala together in a small bowl and keep separate.

3. Now take the sliced lemon and dip in the spice mix nicely and start spreading directly on corn while it is still hot. Otherwise just squeeze the lemon juice well coated on hot corn and finally sprinkle the spice on top. Its up to you how you want to do it.

4. Yummy grilled corn on stove is ready to eat.

Cheppankizhangu fry or cheppankizhangu varuval is very tasty and simple to make side dish for main South Indian lunch menu. Goes very well with sambar, rasam and moor kulambhu(buttermilk curry)This dish is hubby fav and I make it quite often. There are many methods and this one is deep fried in oil and taste like potato chips so even kids will love it.

While making this dish you have to be very careful with oil burst, being safe in kitchen is very important and always stay little distant from gas stove while you are deep frying anything. Sometimes due to the moist present in veggie they tend to burst or even if your hands have little water and some drops falling in to oil pan can cause oil burst and its not good. So be careful with deep fried cooking.

My husband loves lentils in his food especially if its channa(kondai kadalai) or motchai(limo beans)involved. This is very simple to make and goes well with rice ,dosa and Idiyappam. My mom likes it with chapathi too but I would prefer it better with rice flour based dish like dosa, Idiyappam or rice.

Coconut milk gives a very good flavor to this dish and kids will like it too. Its more like a blend of sodhi and vella kari kuzhambu(will load soon) we make. But this taste mild and no strong spice like patta or lavangam added. I like mild flavored dish for ice so everyone can fall in love with it. Do try and let me know how you liked it.

Instructions

1. Soak chickpeas/ kondai kadalai over night and boil them for 10 mins in a cooker and keep it separate.

2. Now in a hot kadai/ pan add oil and fry small onion, tomato, garlic one by one and collect in a plate. To this dry fry grated coconut and keep everything separate in a cup.

3. In blender make a masala of this by adding chilly powder, dhania powder and salt. Add little water if required.
4. In a pan add oil once hot saute jeera then fry the remaining small onion, garlic, curry leaves and add the masala and saute for 5 mins. Now add turmeric powder and check for salt.

5. To this add kondai kadali/chickpeas and add 2 glass of water and let it boil for 10 mins. When done switch it off. Finally add coconut milk and mix everything well.(if you add coconut milk and let it boil it may curdle so always switch off the curry and add coconut milk, the heat in curry itself will let the coconut milk blend)

6. Now serve it with hot white rice or Idiyappam. The kuzhambu taste so good and very mild, kids will love for sure.

I love this simple vendakkai puli kulambu so much. Perfect for lunch box and pairs well with white rice when accompanied with potato fry, brinjal fry or any variety of kootu. Ladys finger is very healthy and my hubby loves it very much. He gets very happy when he can see many vendakkai floating on top. He likes his kulambu filled with that veggie. Kids will love it too..since it has that tamarind pulippu and the vendakkai absorbs all the taste inside it.
I love it with potato fry and my hubby likes it with chepan kelangu fry. Serve this to guest and family, all will love it. Lunch cant get simpler that this. Enjoy it.

Instructions

1. In a bowl place tamarind, pour hot water and let it soak for ten mins. Make pulp out of it and filter it using strainer and keep it separate.

2. Chop the vendakkai/okra to small pieces and slit garlic to two.

3. Now in kadai/pan pour oil and when hot add the seasoning mentioned above and saute them. To this add small onion, garlic and saute for few more mins.

4. Now add vendakkai/okra/ladysfinger and fry for 3-4 mins. When they get tender add tamarind paste and let it cook for 5 mins.

5. To this add turmeric powder, chilly powder, sambar powder, hing and salt. Add water as per your requirement and let it cook.
6. When the oil starts to bubble out and when the kulambu gets thick, just sprinkle the sombhu /fennel powder on top and stir it well. Switch it off in a min. I see big taste difference when I add this powder,if you don't like you can omit. But try once and feel the taste.
7. Serve this hot with white rice and some curry like potato fry, brinjal fry or any kootu variety.

No guilt feel since the rice has fiber in it. One veggie is going directly inside the tummy. Kids will love it too. Goes well with papad or chips or even raita. It tastes good with basmati and also with regular rice. I love to add little ghee when I am serving to kids.

It stays long with its aroma and I make it often when I have unannounced guest coming to my house. Adding methi to day to day life is very important and its rich in iron and good for people who have issues with stomach problem.

Methi Rice is simple to make and tasty heavenly with ghee and garlic inside....

1. Boil basmati rice separately in cooker. Once done remove them and add 2 tsp ghee to the hot rice. This step is important because they give very good aroma when mixed ghee with hot rice.

2. Now in a pan add little ghee/oil and once hot,add jeera and let it fry for few sec. To this add onion and garlic. Let it saute for a min or two. To this add finely chopped methi leaves and stir it well.(I always add salt to the methi leaves to take the bitter smell out)

3. When the leaves are little sauteed, add salt and turmeric powder. Keep stirring and add little chilly powder and stir well again.

4. Now add the hot rice and mix everything together. Yummy tasty smell will cover your whole house. Once blended well switch it off.

5. Hot hot methi rice is ready. Serve it with dal or raita. Simple yet elegant rice mix.

I have been dying to try this vegetarian version of keema paratha. Being a pure vegetarian I really concentrate on my healthy intake, because I have to have balance of all nutrients and vitamins. Soya is loaded with pure protein for recovery and fiber content and I just love it for that reason. When made as stuffed paratha even soya haters wont know they are eating the actual soya chunks, its that yumm and tsty. I send this to my daughter lunch box too . She love sit and so does hubby dear. Other soya recipes I have in my space are soya khurma

I found it pretty easy , When I don't get riped tomatoes she used to make it with tin and I found both taste exactly same. If you don't want to use you can always use fresh ripe tomatoes. Chop them to small pieces or blend them in mixie to chunky pieces and add to the 2nd step where I use the tin method. I promise you that both taste 99% the same. I don't compromise on taste so you can trust me and go ahead and try with tin too.

1. In a pan do the seasoning mentioned above, then saute garlic for sometime to this add fresh chopped tomatoes or store bought chunky tomato tin. Let it boil for sometime and the raw smell go. Say like for 5-7 mins.

2. Then to this add turmeric powder & hing then saute again for few mins. I dry roasted the fenugreek in a pan and blended them with chilly powder and added it to the tomato mix. So let it stir for 10-15 mins.

3. Keep cooking until the tomato chunkiness become thick and color will change to dark red color, now add salt. This process will take another 10 mins. Totally it will take 30 mins and when the tomato starts leaving oil at top after some time and gets that dark red color and becomes half of its volume switch it off.

4. yummy tasty tomato thokku is ready to eat. Goes very well with idly, dosa and chapathi. Store it in fridge for it will stay good for 6-7 days.

1. In a bowl chop cabbage, onion, green chillies, curry leaves, little hing, salt, chilly powder, rice flour, besan flour and mix them all together. Very little water is needed because onion and cabbage leaves little water. So add little like 2 tsp of water. Mix them and start heating oil in a pan.

2. Add little chopped mint leaves and mix it well.

3. Then roll like small balls and deep fry them in a oil and collect them in a tissue paper. Crispy yet soft pakoda is ready to eat. Yumm love this a lot. Serve it with your evening tea or coffee.
