Grilled Corn on the cob doesn’t your mouth water just reading this title??? well my mouth does. There’s so much you can do with corn. From breakfast variety to dip to lunch to dinner. Recipes with corn are unlimited and you just have to have some dreamy imagination how all you can mix corn in everything you do.

How to make grilled corn at home easily??

Perfectly grilled Corn can be easy achieved at your own without any problem. Corn is my mom’s fav and I remember her eating this full day. I am not exaggerating she will literally keep eating just this corn for whole day. She loves steamed corn the best but I like this grilled version a lot. I love corn in my dip and my daughter Joshu loves corn soup. Well you get my point right?? My whole family is crazy about it. Only place I don’t like corn is POPCORN. Yes your heard it, I hate POPCORN. I am sure you are thinking I am a crazy women to not like popcorn but I don’t. Never liked even the smell of it. Imagine my position in theatres. Its soo hard and I always keep my nose covered since I can’t bear even the smell of it. Weird right???

Well in India all people love to do is shopping and going to beach. When you think of beach, the first thing that will come to your mind is raw mango(yummy) sliced long and sizzled with chilli powder and salt. Next famous one is grilled corn and I love the way they pour the lemon juice and cover the corn with chilli powder and salt. AWWWW … so yum. My mouth waters just thinking about it. Well it’s actually very easy to make it at home. All you need is gas stove and “voila” it will be ready in 3-4 mins. Some people make it on oven too but for people who don’t have oven, this is a blessing.
I always think of mom whenever I see corn. She passed away on Jan 1st 2016. God I miss her so much. So whenever I see this corn its holds a very special place in my heart. Check other corn based recipes in my blog are corn soup , Corn Chaat , Corn dosa and soon will be posting Masala corn.

      });

You can either try on the stove straight or you can make it in oven.Take care not to remove the green skin while grilling it on oven. Reason is, it will lose its original taste when the green skin is pelled. You can try making one with skin and one without skin and see the difference.

Instructions

Grilled corn is very easy to make and so much fun when it's homemade.

1. Peel the skin of the corn. I didn't want to hold the corn in hand completely so I used stainless skewers and inserted them at the end of the corn .

2. Now switch on the stove and show the corn directly on fire as shown in pic. Keep rotating the corn to all sides, so it doesn't burn on one side . This will take 2-3 mins. Once done, mix chilly powder, salt and chaat masala together in a small bowl and keep separate.

3. Now take the sliced lemon and dip in the spice mix nicely and start spreading directly on corn while it is still hot. Otherwise just squeeze the lemon juice well coated on hot corn and finally sprinkle the spice on top. Its up to you how you want to do it.

4. Yummy grilled corn on stove is ready to eat.

There is so many variety of kuzhambu in south Indian dish and lots involve with dal and other spices. My husband loves lentils in his food especially if its channa(kondai kadalai) or motchai(limo beans)involved. This is very simple to make and goes well with rice ,dosa and Idiyappam. My mom likes it with chapathi too but I would prefer it better with rice flour based dish like dosa, Idiyappam or rice.

Coconut milk gives a very good flavor to this dish and kids will like it too. Its more like a blend of sodhi and vella kari kuzhambu(will load soon) we make. But this taste mild and no strong spice like patta or lavangam added. I like mild flavored dish for ice so everyone can fall in love with it. Do try and let me know how you liked it.

Instructions

1. Soak chickpeas/ kondai kadalai over night and boil them for 10 mins in a cooker and keep it separate.

2. Now in a hot kadai/ pan add oil and fry small onion, tomato, garlic one by one and collect in a plate. To this dry fry grated coconut and keep everything separate in a cup.

3. In blender make a masala of this by adding chilly powder, dhania powder and salt. Add little water if required.
4. In a pan add oil once hot saute jeera then fry the remaining small onion, garlic, curry leaves and add the masala and saute for 5 mins. Now add turmeric powder and check for salt.

5. To this add kondai kadali/chickpeas and add 2 glass of water and let it boil for 10 mins. When done switch it off. Finally add coconut milk and mix everything well.(if you add coconut milk and let it boil it may curdle so always switch off the curry and add coconut milk, the heat in curry itself will let the coconut milk blend)

6. Now serve it with hot white rice or Idiyappam. The kuzhambu taste so good and very mild, kids will love for sure.

This is usually made on Vinayaka Chadhurthi festival time, but everyone at my house love it so I make it whenever we feel like eating. Best during rainy or cold days. Its usually made with regular rice flour but I wanted to do it with brown rice so made it with that. Red rice is also very healthy and kozhukattai taste very good in that rice too. So why not try in all rice variety. We can make sweet kozhukattai too with all variety of rice. I love the jaggery flavor in it. It takes only 10 mins to make it. Only work is soaking the rice in advance.

1. Soak brown rice for 2 hrs in a bowl. Usually white rice is added but I like kozhukattai in brown or red rice.

2. Now grind rice and coconut together. Add oil in hot pan and do the seasoning mentioned above. Then add the ground coconut and rice mix together and keep stirring in low flame for few mins, till the mix becomes non-sticky like dough in texture.

3. Dry fry moong dal and keep it separate. This is optional but it gives nice crunchy taste to kozhukattai.

4. Now switch off the flame and let the dough cool off. Shape them inside your hand as shown in pic and steam them in Idly cooker for 10 mins. Now serve it hot and enjoy.

Palak Chapati Recipe – Spinach Paratha – Spinach Chapathi – How to make palak chapati

Palak chapatii or spinach chapathi is easy to make and very healthy for us. Kids love this healthy dish, just roll like and spread some jam or feed them plain, they will love it. Spinach is rice in iron and its boring to eat plain chapathi all the time so it’s fun to make this colorful chapathi. I mix peas sometime along with palak since my daughter loves the peas flavor in her chapathi. It stays soft when rolled with aluminium foil and can be packed for long travel or even for lunch box for adults as well as kids. Kids don’t easily eat anything healthy but this, they will love it instantly. The green color will always attract them. The same way I make with beetroot, carrot, corn and all will look so attractive and differnt in color. This is how kids can be lured into eating healthy. I use palak /spinach in most of my cooking and you can make unlimited dishes using palak/ Spinach. Some of the recipes are Palak puri, Palak Raita, Palak Paneer, Palak Pakoda, Palak Pulao,

Palak has lots of health benefits. Its very rich in Iron. When I used to be pregnant with my daughter I used to add handful of palak/ Spinach to all my food in order to avoid iron tonic. I don’t believe in medicine. I believe in food. Healthy food will keep you healthy and eating anything fresh and homemade will deffentely help in improving over all our health issues. My mom always beleived in green leafy vegetable and palak was everyones fav and I love eating it with everything. I also teach the same things to both my kids. My daughter gets excited when she sees palak recipes. Before when she was 4-5 she never used to even try or touch, but now she sees her hair and her energy level improved due to palak and now she consumes it. I even show her Indian cartoon “POPEYE” and she starting taking more after watching it. Now off to making of Palak chapati.

Instructions

1. In a bowl wash and steam the palak for 2 mins in microwave. Let it cool. Keep the water safe.

2. Now blend ginger and green chillies to fine paste and add palak and blend them all together.

3. Now add the paste to wheat flour, mix salt and carom seeds and mix all together to tight dough adding water little by little. I always add carom seeds/ajwain to all my parathas or chapathi. They extract very good flavor when made to hot chapathi.

4. Now heat iron griddle and make chapathi by rolling them first in to round balls and flatten them using roller and make a nice thin chapathi or roti. See to that both the sides have turned golden brown in color and serve it hot with a tsp of ghee on top.

5. I have served this with beetroot raita. I love it so much but any raita variety is fine too. Try boondhi raita or okra(ladysfinger) raita or palak raita of your choice.

Gongura is our family fav food. Andhra cooking involves lots of gongura recipes and one of my fav from all of them is this spicy yummy pachadi. This goes well with rice, dosa, idly even chapathi. Its so simple to make and it can be very addictive. I love adding a dollop of ghee to hot white rice and eating this without any other side dish. Its taste is something to die for. If you haven't tried it before def try this out. Worth every min of your time.

Instructions

1.In a kadai add oil and start saute dry red chillies, once they turn lite brown remove them otherwise it may burn dark. Keep it separate. To the same oil add mustard seed, channa dal, jeera, dhania seeds and saute it for a min and remove it. Let everything cool.

2. Now wash and dry the gongura leaves. Make sure they are dry otherwise they wont stay fresh for long. If the leaves are dry then pachadi will stay for a week or more.
3. Now add little oil and fry the leaves for few mins till they become soft, now collect in a bowl. let it cool.

4. Now add all the fry items in a blender and make a coarse powder out of them. To this finally add gongura leaves and blend them in pulse mode for few mins. The leaves should be 95% done but not completely like paste.

5. Collect them all in a bowl. Now in a pan heat oil and add the seasoning mentioned above and pour the tempering on top of the gongura item and mix everything well. Now add salt and see how it taste. Yummy tasty pachadi is ready to eat. Serve it hot with white rice on ghee as topping. Yumm its so droll worthy dish.

NOTES:
1. Adding hing and garlic is very important so do not skip this step. They give so much flavor to this dish.
2. Usually gongura leaf has a nice sour taste to it,if you find the leaves less sour you can add little bit tamarind. Here in USA the leaves don't taste the same all time. So test the taste and add tamarind piece if you need it.
3. Add oil as mentioned in this recipe, this helps in keeping the pachadi for more than a week. You can store in fridge too.
4. Serve it with rice, dosa, idly or chapathi. They taste excellent.
