I try to add it in most of my grilled veggies because of their radiant color combination. This time I was all in for appetizer food idea since I have guest visiting on most weekends. I love cheese who doesn't right??? So I was thinking why not make panner pizza kind of combination with capsicum. It would taste good and its perfect for appetizers. I tried it and was very happy with the results.... it was mouth drooling so yummm....</p>

                <p style="text-align: center;">1. First heat oil in pan and add onion saute for few mins. To this add shredded paneer and toss for few sec.<br />

2. Now add tomatoes and stir well. To this add Italian seasoning,crushed red peppers,garlic powder or chopped garlic and salt. To this add pizza sauce and stir one more time and remove from pan. Let it cool.<br />

3. Now wash the capsicum and wipe it well. Then cut the head stalk of capsicum and remove the seeds and inside stuff.<br />

4. Chop them 2 slice like shown in pic and stuff the paneer stuffing inside. Finally add mixed cheese and mozzarella cheese on top. On top of this add olive oil and leave it for a min.<br />

5. Now pre heat oven to bake at 375 deg F, now place the capsicum on tray bottom covered with aluminum sheet. Spray oil and place the capsicums.<br />

I always save a bowl full of channa masala for my chaat next day. I always have store bough samosa in fridge because I never know who might show up at unexpected time, so I always keep it a habit to have one packet of samosa in my freezer default. This not only helps with guest helps me and my family at our late movie night. Saving one bowl always ends up with a new spicy exciting chaat. Here is the recipe to make it.</p>

1. In a pan/kadai boil the<a title="channa masala" href="http://redchillycurry.com/channa-masala/" target="_blank"> channa masala</a>(click here to get the recipe) add little water and dilute the channa masala. I had some frozen samosa(make fresh if you have time)This is for quick version. I took samosa out of the packet and deep fried them.<br />

<p>2. Now add it to channa masala and break it to 4 pieces. Let it cook for a minute. Now switch it off.<br />

3. Now prepare <a title="green chutney" href="http://redchillycurry.com/green-chutneychaat/" target="_blank">green chutney</a> &amp; <a title="sweet chutney" href="http://redchillycurry.com/sweet-chutneychaat/" target="_blank">Sweet dates chutney</a>. Then in a bowl mix yogurt and beat it well with spoon. Then add sugar,chilly powder and salt and blend it well.<br />

4. Now place the channa masala in a small serving bowl. Then add green chutney and sweet chutney on top of it. To this add yogurt mix. Then sprinkle some onion,green chillies,tomatoes on top.<br />

5. I love sev a lot use fresh or store bought and sprinkle on top. Finally garnish with fresh coriander leaves and serve it hot.<br />

Either I make <strong><a title="chickpea sundal,konda kadali sundal" href="http://redchillycurry.com/konda-kadalai-sundalchickpeas/" target="_blank">channa sundal</a>, <a title="amritsari channa" href="http://redchillycurry.com/amritsari-chole/" target="_blank">amritsari channa</a></strong> or some channa samosa chaat. I also make channa poori for my kid and she loves it. Will load the recipe soon. I make this with famous main dish <strong><a title="bhatura" href="http://redchillycurry.com/bhatura-without-yeastpunjabi-recipe/" target="_blank">bhatura </a></strong>or some times with poori or chapathi. Its very easy to make and its always guest pleasing. Now off to recipe.</p>

1. Soak channa or kondal kadalai over night and boil it 3/4 th in cooker adding 1 cup water. To this add cinnamon, cloves, bay leaf and boil it well. When the channa is cooked,remove the channa and store the water separately(dont throw the water,use it for gravy)<br />

<p>2. Now in a kadai or pan add oil and to this add jeera and then saute it for some time. To this add ginger garlic paste and saute well again. Then add onion and saute it too.<br />

3. To this add tomatoes and let it become soft and mushy. Then add the dry ingredients like turmeric powder, chilly powder, dhania powder and amchur powder. Sprinkle add and let it cook for few mins. To this add the saved channa water and let it cook for 5 more mins.<br />

4. Now take one handful of channa and keep it separate. Add the rest to channa gravy and stir it well. Add the handful channa in a blender and blend it for a 2 pulse and add it to the gravy too.(Mom says it brings out very good flavor and thickens the gravy) Now sprinkle finely chopped coriander leaves and when the oil bubbles up at the top switch it off and serve it with <a title="bhatura" href="http://redchillycurry.com/bhatura-without-yeastpunjabi-recipe/" target="_blank"><strong>bhatura.</strong></a><br />

I love this with jeera rice , it taste so delicious and so heavenly.  Whenever me and hubby are in a perfect northie food mood this is a must in our lunch. It goes well with chapathi too, but I personally prefer with jeera rice. Its very simple to make and kids will love it too.</p>

1. Boil toor dal and cook it till they get 80% mashed. Keep it separate.<br />

2. In a pan add oil, when hot add hing, jeera, garlic and saute for few mins. Add more garlic than usual to get a perfect garlicky flavor. To this add green chillies and saute for few more mins.<br />

3. Then add tomatoes and let it get little mushy and soft, then add turmeric powder and salt. Saute for few mins. To this add cooked dal and stir it well. Let it boil for 5 mins. To this add chopped coriander leaves and switch off the flame.<br />

4. Now heat a pan add ghee, then add jeera, dry red chillies and then chilly powder and switch it off immediately(otherwise the chilly powder will get burnt)now add this to dal and mix it well. Tada yummy garlic dal fry is ready to serve. Serve it with jeera rice.<br />

I had some green chutney and garlic chutney left in fridge and I suddenly had craving for it, but was not energetic enough to make chaat so I took the dosa batter out and started making Uthappam. When I started with the first one, I started to get excited and blended with many flavors and ended up stacking the uthappam and thoroughly enjoyed the layers. My tongue was able to taste all the flavor from that layered uthapam. Its so fun to make and you can modify it anyway you want. Let your Imagination flow freely :)</p>

                <p>1. Take dosa batter, heat the iron tawa and pour a thick uthappam dosa(thinly made dosa is called <strong>Paper</strong> <strong>dosa</strong>,thickly poured batter is called <strong>Uthappam</strong>)</p>

2. Now add the chopped onions,green chillies and let it sit for a min. To this add podi(I added <a title="yellu or sesame podi" href="http://redchillycurry.com/yellu-podisesame-podi/" target="_blank">Seasame/Yellu podi</a>, you can use Idly podi too) and sprinkle it well. When the bottom turns golden brown flip to the other side. Let it get cooked too. Then turn it over and keep it separate.<br />

3. Now make another batch thick uthappam, to this add <a title="green chutney" href="http://redchillycurry.com/green-chutneychaat/" target="_blank">green chutney</a>, <a title="garlic chutney" href="http://redchillycurry.com/errared-kaaram-dosaandhra-speciality-rayalasemma/" target="_blank">garlic chutney</a>( for spiciness). Spread it well with spoon. Steam it or turn this to other side(sometimes turning makes it sticky to pan so close it with a lid if possible) When done keep it separate.<br />

4. Now make another uthappam and spread tomato ,corn and capsicum on top of it(I forgot to click it with capsicum,oops sorry!!!) When the bottom turns golden, flip to other side. When its cooked on both side remove it and keep it separate. Switch off the flame.<br />

5.Now Using a sharp knife slice to 8-12 pieces like shown in pic.<br />

All the flavors mixed in your mouth will make your tummy super happy...mine did so try it out. So easy and so tasty.<br />

1. In a bowl soak red kidney beans or black kidney beans(to make work more easier get the can one)and soak overnight and boil them next day and store it in a bowl for making nachos.<br />

2. Chop onion,tomatoes,jalapeno pepper,olives,sweet corn,coriander leaves and mix them all in a bowl. In this add salt and lemon juice. Mix it well and keep it separate. To make work even simpler add store bought ready salsa mix instead of chopping everything fresh its up to us.<br />

3. Now chop avocado to small pieces and place in a bowl. I always make <a title="guocomole" href="http://redchillycurry.com/guocomoletortila-corn-chips/" target="_blank">guacamole</a> for side and add it finally to the melted cheese on top.<br />

4. Now shred the cheeses and place it in a bowl too. Now open a tortilla chips/ corn chips and arrange in a plate or bowl that is microwave safe.<br />

5. Place the chips first and on top of it add the baked beans and on top of it add the onion and tomato salsa mix and then layer with cheese on top. Same way you can make another layers too. Now microwave for 10 min or until the cheese melts then serve on side with guacamole and enjoy this yummy snack while watching tv.<br />

I came to know Dabeli 5 yrs before while I was watching Sanjeev Kapoor's program in tv. It was a combination mix of pav bhaji little and few fried and fruit mix. I liked the idea of it. Any stuffing inside pav is my fav be it vada pav or pav bhaji. So I gave it a try and I like it ever since. The dabeli powder gives a kick to this chaat. Getting dabeli powder from grocery reduces little work but living in NY I never could find one so started making the powder at home. Its simple to make Looks like lot of work but when planned well its very easy to make.</p>
<p>Its nice to serve in party or to guest or even in a barbecue party. I cant say I love it but its def different so you can give a try to it. It can be made once in a while. People who have never tried before will like it for sure.</p>

                <p><span style="text-decoration: underline;"><em><strong>   Home Made Dabeli Powder:</strong></em></span></p>

1. Dry roast 6-7 red chillies,2 tsp dhania/coriander seeds, 1 tsp Jeera, small stick of cinnamon and 2 cloves in a pan. Let them cool and then grind to fine powder.<br />

2. Collect it in a small container. The mentioned above is only for making this dabeli chaat if you require more increase the measurement.(Getting dabeli powder from store is also fine)<br />

3. Now in a pan add some butter/oil and saute jeera to this add onion &amp; tomatoes and saute it well too. To this add dabeli masala powder,turmeric powder and salt. Let it cook till the raw smell is gone. In a separate bowl boil potatoes and peel the skin and mash it.<br />

4. Add it to the masala and remove from fire. To this add chopped coriander leaves and lemon juice and mix it well again.<br />

<li>Chilly Powder-1 tsp</li>
<li>Lemon Juice- 1 tsp or more</li>

5. grind all together in a blender and add little water and grind to fine paste. Remove and store it in a bowl.<br />

7. Now keep both separate. Mean while use the roasted peanuts,fresh pomegranate and sev. keep all in same place to align.<br />

8. Now in a bowl place the potato masala and on top of it spread sev,pomegranate,roasted peanuts one by one as layers.<br />

9. Heat pav bread in pan using butter and to both the sides spread the garlic and sweet chutney and place the masala on top. Close the bun and serve it fresh. Sprinkle fresh onion on top too. SO yum and perfect snack.<br />

I don't know how time flies by this fast, something keeps coming and I get busy with it. Lots of traveling ,meeting up old friends and relative and too many things happening at this short period of trip, I have absolutely no time to cook at home since I am enjoying the luxury of my mom's cooking.</p>
<p>Well She made this recently and I make it very often too.Its a very healthy and tasty dish that will go very well with rice and with perfect side dish it just taste so awesome. It's loaded with good stuff,full of drumsticks pulp so lots of iron and kids will love it when you mix it with ghee and feed them. Now off to recipe....</p>

1. Take 2 cups of drumstick pieces and boil them well in a cooker or in a bowl with hot water and close the lid.<br />

2. Now remove the pulp out using a spoon and keep it in a separate bowl. Have few pieces(3-4) of fresh drumstick pieces cut separately and keep it separate too. We will add it later to the curry/kuzhambhu.<br />

3. In a pan do the seasoning mentioned above and add crushed garlic pieces and saute them well. To this add onion,drumstick pieces( use just 2-3 pieces to show that its drumstick kuzhambhu)green chillies and tomatoes one by one and saute them well too.<br />
4. To this add turmeric powder,chilly powder,coriander powder and salt and add 1/2 cup of water and let it cook for few mins. To this add the the removed drumstick pulp and let it cook for 5- 10 mins.<br />

<p>5. When the required consistency is reached remove it from fire and serve this with white rice. It goes well with chapathi,dosa too. I love this and its my fav, very healthy and tasty too.</p>

The guy who made this was a punjabi chef and I instantly loved that dark look. I have always made brown color and was very eager to know why it was black and what he must have added. I met him and gave compliment for his food and inquired him why it was black he said its AMRITSARI STYLE Chole and they add tea leaves to it. I was shocked and amazed at the same time. Some how nicely I asked him for the recipe and he was happy to share it with me. Then came out and made it immediately. This goes so well with bhatura and poori.(Will load the bhatura recipe very soon)I also took notes from <strong>Dassana(My new fav fellow blogger) </strong>from vegrecipesofindia she and chef def had  the same taste and measurement...Wonder if they were cousins or its a family recipe hmm......</p>

1. Soak 2 cups of Channa in a bowl overnight and wash it well in the morning. To this add 1 and half cup of water. Then add cinnamon sticks,cloves,bay leaf,cardamom,tea packet(don't be shocked they always use tea bag in Amritsar chole and gives an excellent color to the Channa,make sure u use tea bag if you put in tsp the chole will get messy later) and ginger-garlic paste. Add little salt too and let it cook for 7-8 min in a cooker.<br />

2. Now make sure you filter the water separate and keep it safe.<br />
3. In a pan add oil then add jeera,onion, ginger pieces(chopped julienne)tomatoes and saute till they become soft. Now add the cooked water to this and add the spice powder mentioned above like red chilly powder,turmeric powder,jeera powder,garam masala,dhania powder and salt.<br />

<p style="text-align: center;">4. Now to this add channa/konda kadalai and add salt and let it cook for few more mins till the water thickens. To this finely garnish coriander leaves and serve it hot with bhatura or poori.<br />

5. While serving this always keep chopped onions and lemon wedges on side. After tasting this delicious channa you will never go back to the regular channa.<br />

I have been posting lot of regional recipe for the past 5 months and that is due to this wonderful group. This is a group of people who belong to 2 team SOUTH TEAM and NORTH TEAM and each giver their own recipes to each other say for (eg)  I belong to south team,so a member from our team will give a authentic south recipe to North team and North team will do the same for us. I have never made or heard about this recipe. I made it for the first time,I had little difficulty while making this because being a pure vegetarian it did smell a little bit like fish. The besan flour with ginger &amp; green chillies when fried in oil gave a different smell. But when the gravy was done I loved the combination together.<br />

<p>I was goggling about this recipe and found some interesting facts like, this was a very respectful food since it was SATVIK, and it doesn't contain any onion or garlic. This dishes were also served during wedding ceremonies just for widows since they were not allowed to intake onion and garlic. Well def interesting hmmm.</p>
<p>This dish paired very well with hot white rice, it doesn't really need a side dish because I liked the channa cake fry with rice. 1. Soak channa dal over night or 5-6 hrs in water. Then drain it and blend it with ginger,green chillies,turmeric powder and salt to fine paste.<br />

2. In a pan add oil and add a pinch of hing, now transfer the besan paste to the pan and keep stirring little it gets the dough consistency.<br />

3. Now transfer this to a oil spread plate and spread it evenly with a flat spoon or spatula. When it is still hot cut to diamond shape with a knife and leave it for 5 mins. Then deep fry this till golden brown and keep it separate.<br />

4. Now cube potatoes and deep fry them too.<br />

5. In a pan add some oil, to this add jeera,bay leaves,ginger paste,green chillies and tomatoes. Let it cook well. To this add turmeric powder,chilly powder,curd and garam masala. Add potatoes and salt.<br />

6. Then add coconut milk and cashew-raisin paste and let it cook for 5 mins.<br />

7. Then add the besan fry and let it sit for few mins. Now remove the besan fry and keep it separate. When it cool down add to the gravy otherwise it will absorb all the gravy. Then finally garnish with coriander leaves and serve it hot with white rice.<br />

I had cut the potato like finger sized and made this curry. It requires no ginger garlic paste and its very quick to make. I love the flavor it brings with potato-lady's finger combo. It goes well with roti/chapathi. My husband likes it with jeera rice too. Its very simple to make and will be ready in no time.</p>

1. In a pan pour some oil then season it with jeera then add lady's finger and saute them for few mins. To this add chopped potatoes and saute it well too.<br />

2. Now add onions and let it turn golden color,to this add tomatoes and fry them well. Now add turmeric powder,chilly powder,garam masala,salt and amchur and let it cook for 5 mins. Sprinkle some water and keep the lid closed and let it cook.<br />

1. Chop all the required veggies thinly and keep it ready.<br />
