Verkadalai Urundai/Peanut Urundai
I made this urundai during Karthigai Deepam and forgot to post it. So thought will load it today.I have made the urundai with whole groundnuts/peanut but you can break in to halves if you prefer. I have tried giving the exact measurement for the recipe,I don't think its possible to make any mistake. One problem is when you make urundai it will be little hot so try to rub ghee little bit more to your palms to take the heat. It will be done in 20 mins max and fabulous sweet is ready. Store it in a air tight container and it will stay for a week or two. Finish off before that because it will lose its crispiness.

Ingredients
- Groundnut/Peanut - 1 1/2 cup
- Jaggery - 1 cup
- Cardamom powder(Elachi) - 1/4 tsp
- Ghee - 4 tsp(2 tsp for rubbing in palms)
Instructions
1. Slice the jaggery smoothly using your knife and store them in a cup.
2. In a pan add some water and let it boil, to this add jaggery and let it melt. Then remove the syrup and filter it so no dust or mud is present in jaggery. Then boil it back till the jaggery color changes and it gets ball rolling consistency((ie) The syrup will become thick and when you add it to the water it will shape to ball instead of melting in water)That shows the consistency is perfect.
3. Mean while when the syrup is getting thick dry fry the groundnuts to golden brown and remove the skin and break them to half or just use the whole to make the balls.
4. Add elachi powder to the jaggery and 2 tsp of ghee and mix it well and remove from fire. When the consistency is reached start adding the groundnuts/peanuts. Now rub your hands with ghee and start rolling like balls to get the required balls/urundai. It will be hot and rolling them will be little difficult but with practice it will get better.
5. Now enjoy the healthy and tasty verkadalai urundai

Thank you swathi,well try changing the jaggery usually that’s the culprit when you use the right one you will get it perfectly dear.
