Rava Kesari
This recipe is from my Mother-in-law.She loves to make this.The sweetness isn't too high its very mild so it taste good.Its quick and easy to make.This sweet is made during Navrathri or any festival time.She sometimes makes it for birthdays too and will make me cut it like cake.I just like that love shower.So here it is, quickly made Kesari that's ready with in 5-10 mins.

Ingredients
- Rava/sooji - 1 cup
- Ghee - 1 cup
- Sugar - 2 1/2 cup
- Cashew nuts,broken - 1/4 cup
- Raisins - 3 tsp
- Food colour(yellow) - 1/4 tsp
- Cardamom powder(Elachi) - 1/4 tsp
- Salt to taste - a pinch
Instructions
1.In a kadai dry roast the rava let it turn lite brown in colour.Then remove from fire and keep it separate.
2.In a pan boil some water add sugar and dilute it well.Add a pinch of food colour(yellow colour or orange colour) to the water.Then add a pinch of salt to it and mix it well.
3.Now slowly mix the rava little by little to the hot water and keep stirring so that lumps are not formed.Continuous stirring is required.
4.Now add ghee to the hot rava and mix it well.It will start to get thick,keep stirring well until both rava and ghee mix well together.Add powdered cardamom(elachi powder) and mix it well again.
5.Now in a kadai heat ghee and roast cashew nuts & raisins to golden brown and keep it separate.Now add them all to the rava mix and stir well again.
The rava kesari looks great. I liked the fact that you dissolved the sugar in water. Just wanted to let you know. I think you must have missed adding the ingredient “Water” and its quantity to the ingredient list. Most important
