Lady’s Finger & Potato Curry
I love potatoes with any veggies. I had some fresh lady's finger and I cut the ends and made use of the long ones. I had cut the potato like finger sized and made this curry. It requires no ginger garlic paste and its very quick to make. I love the flavor it brings with potato-lady's finger combo. It goes well with roti/chapathi. My husband likes it with jeera rice too. Its very simple to make and will be ready in no time.

Ingredients
- Vendakai/Ladys finger,cut long - 1 cup
- Potato,long slice - 2
- Onion,sliced long - 1
- Tomatoes - 1/2 cup
- Turmeric powder - 1/4 tsp
- Chilly powder - 1 tsp
- Amchur powder - 1 tsp
- Garam masala - 3/4 th tsp
- Salt - as per requirement
- Coriander leaves,freshly chopped - 1/4 cup
- Jeera - 1 tsp
Instructions
1. In a pan pour some oil then season it with jeera then add lady's finger and saute them for few mins. To this add chopped potatoes and saute it well too.
2. Now add onions and let it turn golden color,to this add tomatoes and fry them well. Now add turmeric powder,chilly powder,garam masala,salt and amchur and let it cook for 5 mins. Sprinkle some water and keep the lid closed and let it cook.
3 When they done garnish with coriander leaves and serve it hot with roti/chapathi.
Diffrent combo of vegetables. A fusion curry Love the color of the curry. Sure will go well with chappathi.
