Carrot Halwa(Gajar Ka Halwa)

Most simplest and quickly made recipe.I enjoy carrots in any form,everyone who knows me personally in my life always offer carrot juice instead of Coffee and Tea, when I go to their house.I love it that much.(I hate milk that's another story). So when ever I have lots of carrots in my fridge,I try to make this.Its not only healthy for adults but very good dessert for children.I like using sweetened condensed milk to this dessert because it lets us avoid sugar and they taste so much better than just adding milk.This dessert is very mild and is soft in texture.When people hear the halwa they know its going to be sticky and hard to chew,trust me its not.Even a teeth less elder can eat this sweet, its that soft in texture & tastes so good.

1.Soak almonds,cashew nut,raisins,badam for 10 min in warm water.Then peel the skin and cut them to fine slices.

2.Grate carrots to big slices,dont grate them too thin.Then they will get completely mashed .Use the big slicing side as shown in picture.

3.Pour ghee in a kadai,add 2 cloves and saute them for few mins, let the ghee absorb the flavour.Then remove the cloves.Now add the grated carrot and saute them till carrot is slightly cooked( for 2 mins).

4.Add half a glass of milk to the grated carrot and let it cook for 5- 10 mins.

5.The carrot must get almost dry and absorb all the milk,till then let it cook.Then add powdered elachi/cardamom to the mix.

6.Let it cook for 2 mins,now add the sweetened condensed milk(I used nestle). No need of extra sugar because the condensed milk has enough sweet.I only added 1 tsp of sugar.Stir it for 5-10 more mins.Let it get dry.I added 1 tsp of ghee to make the mix little thick.

7.In a kadai/pan separately heat ghee and roast the almonds,cashew,badam and raisins.Add them to the mix with more ghee and stir them to the consistency that you prefer.

8.Enjoy it in a bowl,yummy sweet ready in few minutes.

      hello janani ! im from south india, ian can you believe ive never eaten corrat halwa made with red (dilli) corrats !the only kind we got here till a few years ago were orange ooty corrats and i grew up eating orange corrat halwa ! but the halwa tastes splendid nevertheless.but now i do see red ones with local vendors . imna try it with them soon !Lovely post. do post more often . i really look fwd to ur posts .

    The carrot halwa recipe here was very simple and came out great. Warm it up and then add plain vanilla ice cream and eat them together. Tastes heavenly.

      Yes I am sure addition of vanilla would have been a definite treat.
