<p style="text-align: left;"><strong>Vegetarian Meatballs recipe</strong> is super simple to make and I have had very good reviews from all of my meat eating friends. The first time I ever saw this recipe was when I landed in New Jersey, I was so damn hungry and wanted to order something in Airport food court. All I could see on the wall pic ad also on table was this Meatballs with twisted Spaghetti Pasta. I am a pure vegetarian and have never seen any dish with Beef in India. But it Meatballs looked very appealing to me, since I cant eat them I have always thought of trying it in vegetarian version. I have seen the texture of the meatballs, they are kind of crumbled and chewy and soft. I kept thinking which would be a good substitute for this beef texture. My husband eats meat and he always made fun that my favorite soya chunks / Meal maker taste just like meat. Then this idea popped in my brain and I thought why not give it a try.<br />

I quickly experimented few ingredients and vaila, I was vert happy with the result. Everyone in my family loved it and my daughter who s a big food critique loved it too. I liked how soft the meatless  meatballs were inside and how firm and nice they holded the shape outside. If you are a food lover like me, you would def love this vegetarian meatballs a lot. You wont fail for sure and won&#8217;t be disappointed, since I have tested on so many people and it&#8217;s been a hit for long. So try this vegetarian meatballs with feeling scared. If you like soya chunks then you will def love this. It was not time consuming, it&#8217;s very quick to make, if you have your Marinara Sauce and Pasta ready. Making both of these sauce at home are very easy but since it's under 30 minute recipe and since we don't like spending too much time in kitchen. We are speeding up the process by getting these two sauces from store. Its readily available in all stores.</p>
<p>Steps to make Meatballs:</p>
<p style="text-align: left;">I have used soya chunks here since I felt it has that meat taste and texture of the minced beef. When soya chunks gets minced they look a lot like minced beef. Okay now off to making this meatless meatballs.<br />

1. Take 2 cup water and let it boil for 5-7 minutes.  Switch it off. Now add 1 cup of soya chunks and let it stay in that hot water for 5 minutes. They will change in size and will look soft. Now pour the hot water out and add cold water to soya chunks. Leave it for 5 more mins. Then throw the water and squeeze the soya chunks completely. Now blend them nicely in a blender as shown in pic.</p>

2. Transfer the minced soy chunks into a big bowl. To this add chopped onion, garlic, cheeses, salt, parsley and  breadcrumbs. Now take this again to blender and in pulse mode just beat it twice like for a 2 sec. Now add maida flour and make a ball out of it. I got 12 balls from 1 cup of soy chunks. Now heat oil in a pan and seep fry and remove it when they are slight golden in color as shown in pic.<br />

3. Keep them in a tissue paper and let it absorb the oil. Mean time make your marinara pasta and Spaghetti ready. To make spaghetti follow the instruction given in the package. Once done , drain pasta from water and when they are still hot, add pesto sauce and mix everything well.<br />

4. Now off to Marinara sauce preparation. Since I was in a hurry to make it fast. I used the store bought. You can use the homemade marinara sauce too by adding olive oil in a pan, then add chopped onion, garlic , red chilly flakes and stir fry it. To this add chunky tomato puree and let it boil for 10 mins. Now add fresh basil leaves and this is how we prepare <strong>Marinara sauce</strong>. Okay since we are using store bough here, all you have to do it heat pan. Now add olive oil , use chopped onion and garlic and pour the marinara sauce into it.<br />

5. Since I like it little spicy I added pepper, salt and little bit of dry chili flakes for extra flavor. Add little water or you can use the same water that was used for boiling pasta. Add half cup not more than that. Let it boil for 10 mins or until the sauce gets little thickened.  Switch it off. Now add the soya balls and coat it well with marinara sauce.<br />

<p>6. Now in a plate place the hot pesto spaghetti pasta and serve this vegetarian meatballs on top. Now enjoy this delicious food. You mouth and tummy will thank you. It's like a festival celebration and balanced food.</p>

I love making white sauce very frequently, since my kids loves it a lot. She likes her mac and cheese with simple white sauce and she like mozzarella cheese in it. Even though I tell her parmesan cheese taste much better, she insist on adding only mozzarella. I must say it does taste yum. White sauce is not just for kids, its for adults too. This vegetable pasta in white sauce is very healthy also. When I crave for something lite and cheesy then this vegetable pasta in white sauce would be my first choice. Our family has such difference in taste when it comes to pasta. My daughter likes just white sauce pasta. I love my pasta with lots of veggie and pesto sauce involved for sure. Then comes my hubby who loves creamy tomato pasta. I don&#8217;t really care much as long as it has pasta. I love it so much. For lazy weekend pasta is the best choice.<br />

                <p style="text-align: left;">1 . First choose what kind of pasta you want to make for this recipe. There are so many options like penne, spiral, elbow, shell and many more. Here I have used shell shaped pasta. First take a pan and add 5 bowl of water and sprinkle little salt and let it boil. Now add the shell shaped pasta and let it cook for 15-20 mins. Read your instruction given in your pasta box. Cook according to that. Don't overcook pasta.  I always use the pasta water for making sauces. You can use it or throw it. Its purely up to you. But for this recipe I didn't use the water.</p>

2. Now when the pastas are cooking. Heat pan and add some olive oil . Now saute all the veggie for 2-3 mins in the oil, don't overcook them.   You can add any veggie of your choice like squash, zucchini , broccoli  anything of your choice.I added pepper powder, little salt, dry red chilli flakes, Oregano, garlic powder  and little parmesan cheese.Let everything cool well. Once done keep it Separate.</p>

Now keep the flame low and slowly add milk and keep stirring. Care should be taken while making this white sauce. Keep stirring otherwsie it will burn and stick to the bottom.</p>

<p>4. Once the sauce gets thicker as shown in pic, Switch off the flame. Now transfer the cooked pasta into the white sauce, add the cooked veggies too and coat everything together. Pasta is ready. Its very simple to make and I love variety in it. Out of all the variety pasta I make I like this one THE BEST. why??? well its melts in your mouth and your tummy will crave more. Kids will love it. The cheese never over powers the taste and its so delicious. I like to add few alteration to this like adding extra garlic powder or  sauce or may be some pesto sauce to go. Its up to you to explore the taste. I have tried adding wine once to this sauce and I loved it. I couldn't really taste the alcohol in it but it was diff way tastier. So why not make our tummy happy. Pasta with creamy tomato sauce.</p>

                <p style="text-align: center;">1. In a pan add butter, when they melt add little flour and combine them well. Once they are mixed well add milk and whisk them well.<br />

2. Then add heavy cream and keep whisking it till they form a soft buttery cream texture. This is called <em><strong>WHITE SAUCE</strong></em>. To this I added pasta sauce and mixed it again. I have added garlic powder and mixed them well and switch it off. Keep it separate in a bowl.</p>

3. Now in a separate bowl boil pasta(follow the instruction shown in cover) when they are done Just sprinkle Parmesan cheese on top along with few basil leaves and later you can serve this creamy sauce on top. This is one way.<br />

4. But I wanted to skip this Parmesan cheese,so I added<a title="pesto sauce" href="http://redchillycurry.com/homemade-pesto-sauce/" target="_blank"><strong> basil pesto sauce</strong></a>. You can use homemade or store bought. Add when the pasta is hot and mix it well. On top of this add this creamy sauce and serve it hot.<br />

I made this recipe long time back and since then its been our family fav.I made this from <em><strong>Giada's Italian Recipes.</strong></em> My kid really loves it. I have added pesto sauce to this recipe because I love the flavor in it. 1. Chop the mentioned vegetables long. Season it with salt and pepper and roast them in oven for 5-7 mins. They taste well when they charred. If you dont have oven add olive oil in a pan and toss the veggies well in a pan and keep it separate.<br />

2. I used flori pasta(flower shaped) because its nice in shape and looks beautiful on plate. You can use any type of paste for this recipe. Add 4 glasses of water and add little salt and let it boil. Add paste to this and let it cook well. Collect the water and pasta separate when its well cooked.<br />

3. Now add the veggies that are oven roasted and stir in pan for a minute. To this add Italian seasoning &amp; salt. Stir it well. Then add the cooked paste and stir again. To this add <a title="pesto sauce" href="http://redchillycurry.com/homemade-pesto-sauce/" target="_blank">basil pesto sauce(homemade)</a> and stir again. While they are still hot add the Parmesan cheese and serve it hot. Add salt and pepper if required. It has no spice too so you can add chilly flakes or more pepper to this.<br />

            <p class="recipe-desc"  itemprop="description"><p>I know this upma sounds very simple and I wasn't thinking of posting it until I had a cousin telling me that their bachelors friends enjoyed it very much. They live in USA and they have purchased the ready made Idiyappam and made it this way and loved it. Mom made this for dinner when I was in India for visit. Since it was just 2 of us and we were not in a mood to eat anything heavy she suggested we make this one. So we had few left over Idiyappam from breakfast and she quickly made it like upma and turned another bowl of Idiyappam in to podi Idiyappam. I just loved it very much and I gave this tip to my cousin and she made it too and she loved it. She told me to write it so that its easy for bachelors or it can be made for your child too. They will def love it.</p>

I thoroughly enjoy the noodles till my last spoon. I love it. It really makes our work very simple. Kids will like it too and they never fuzz while eating this. So when you are not in a mood to cook or tired, just make this 5 mins noodles. Just try to add more veggies so that your kid will eat some veggie too and you don't have to feel guilty that you are feeding her some plain noodles. Its best during cold winter. With snow outside and a hot bowl of noodles in your hand ahh.....can things get any better???? I don't think so too... so lets enjoy our noodles.</p>

                <p>1. In a pan add some oil then saute onion, tomatoes for few mins. To this add some chopped vegetables and stir them for 2  more mins.<br />
2. Do not over cook the vegetables completely because the crunchy veggies add taste to the noodles. Then add some water let it boil for 5 mins and then add the noodles and let it cook for 5 min.<br />
3. To this add the noodles masala and stir well for a minute. To this add some soya sauce,chilly sauce and switch off the flame and stir well. I sometimes add spring onions(optional) to get that Chinese flavor smell so if you want you can skip it and serve it to kids. They will dig inside it totally.</p>

1.In a blender add basil leaves,mint,parsley leaves,pine nuts,garlic,spring onion and grind them all to fine paste.Then to this add olive oil and Parmesan cheese and blend it in pulse mode for a min.Now sprinkle some salt and mix it well.Voila!!!!!!!!!!!! Pesto sauce is ready.Add this to bread or pasta or saute them with vegetable and serve it hot.I love to add this paste to my pastas and as dips sometimes.Will soon load recipes that has pesto sauce in them.Enjoy it right now with yummy hot pasta.<br />

                <p>1.Boil the noodles according to the instruction given in the packet. Now sprinkle 1/2 tsp of oil to the noodles so they don't stick.<br />

<p>2.Heat the wok/pan pour some olive oil and start stirring the vegetables given below.<br />

<p>3.Add soya sauce,red chilly flakes or red chilly sauce,schezwan sauce and stir fry.<br />
4. Now add the noodles to the mix then sprinkle pepper powder, salt.care must be taken while adding salt because the soya sauce will already be salty so add salt at last.<br />
5. Spring some spring onions and serve hot.</p>
