Vegetable Manchow Soup
I know most of us must have enjoyed this spicy delicious soup during cold/winter season. I love this soup a lot even though I am not a great fan of soya sauce and noodles blending in my sauce this one is exceptional. They taste splendid and its something that could put your taste buds on dance. It was so cold yesterday night so I thought why not some spicy soup??? so I made it and slurped with a hearty smile :)
While drinking this soup my hubby was asking whats the difference between hot n sour soup and this vegetable soup??? hmm....that was really a very good question but as far as I know I think they don't add noodles and probably less vegetable but I am not sure but either way both taste so good and who cares whats the difference lets dig in to our yummy soup. what do you say????

Ingredients
- Carrot,finely chopped(small piece) - 1/4 cup
- Beans,finely chopped(small piece) - 1/4 cup
- Baby corn/Corn kernels - 3 tsp
- Tofu(optional) chopped to thin slices - 3 tsp
- Mushroom,sliced thin - 2 tsp
- Cabbage,finely shred - 2 tsp
- Bell peppers/Capsicum.thin sliced - 3 tsp
- Ginger,finely chopped - 4-5 tsp
- Garlic,finely chopped - 4 tsp
- Garlic powder - 2 tsp
- Dark soya sauce(I used ching's) - 3 tsp
- Red Chilly Sauce - 1 tsp
- Green chillies,finely chopped - 1
- Salt/Ajinomoto - 1/2 tsp
- Spring onions/Scallions,finely chopped - 1/4 cup
- Crushed Pepper powder - a pinch
- Corn flour - 1 tsp
- Noodles,boiled - 3-4 tsp
Instructions
1. In a pan add oil(I used 1 tsp butter because I love the flavor)to this add ginger,garlic,green chillies and saute them well. I added few spring onions too and sauteed them well.
2. Then add the chopped vegetables like carrot,beans,cabbage,capsicum,corn,tofu and mushroom and saute for few mins.
3. Now add the red chilly sauce,soya sauce,pepper and toss them. Now add 2-3 cups of water and let it boil for 5 to 7 mins. Now add the garlic powder and check for salt and if its less add salt.(If you have vegetable stock you can add it straight instead of 2 cups of water)I didn't have it so I added the water and made the vegetable boil in it.
4. Now to make it little thick mix cornflour with little water and dilute it well and add it to the soup and mix it well. Meanwhile in another pan boil some water and cook the noodles remove it and let it cool. Then deep fry them in oil for 2 mins and collect them separate.
5. Adjust the spice according to your needs if you want it more spicy you can 1/2 tsp of red chilly sauce again and let it boil. To this add the fried noodles and serve it hot with spring onion garnished.
6. This taste so good with baked potatoes as soup appetizer.
