Mango Salsa
Mango Salsa yum! yum! a very colorful and wonderful combination of sliced mango and corn.Its up to us to combine any ingredient.The soft and sweet mango with crispy corn is perfect for evening munching.When you are bored with the old stuff try this refreshing mango salsa dip with any types of chips or just plain.I really cant sit and watch it for long so I jump in scoop it and there.... gone to my stomach.

Ingredients
- Ripe Mangoes - 2
- Sweet corn - 1/4 cup
- Red capsicum,finely chopped - 2 tsp
- Jalepenos or Green Chillies - 2
- Olive oil - 2 tsp
- Salt to taste
- Pepper powder - 1/4 tsp
- Lemon juice - 2 tsp
- Cucumber(optional),fienly chopped - 2 tsp
- Parsley or Coriander leaves - 3 tsp
- Onion,finely chopped - 1/4 cup
Instructions
1.Take some ripe mangoes and cut them in to long slice and using a knife edge slit them in to small pieces like blocks & scoop it out with a spoon.This will help in retaining the shape and will taste good when u get that whole piece in your mouth.
2.I had fresh parsley leaves at home so I used it for flavor.I am a big fan of basil and parsley but if you dont have it at home just use fresh coriander leaves this would taste good too.chop them really fine.
3.I had some frozen corn kernels so I boiled them for a min in microwave and mixed it with mango pieces.Then finely chop onions,capsicum,jalapenos or green chillies and add them to the mix.
4.Stir it well with adding olive oil,salt and pepper powder at the end.serve it right away in a cup with a spoon or use it as dip for chips.
VARIATION:
- Use tomatoes if you dont have lemon but the lemon juice brings the sweetness of mango and corn together and takes it completely to that beach flavour dish.
- You can use basil leaves or use any seasoned salt too in fact mix avocado too if you are in mood for colorful salsa.
- You can add boiled red beans or rajma to it and sprinkle some fresh cheese it will taste awesome.
