Andhra Gongura Pachadi(Red Sorrel Leaves)

A delight dish from Andhra Pradesh,everyone likes ready to go kind of dishes and this one is very famous in south Indian and nothing can compete with this tangy spicy gongura.Pachadi is very famous in Andhra,mostly Telugu people like mixing pachadis like this in their white rice either mixed with oil or ghee.Well I love this dish so much.Try it out,this is my version of gongura pachadi.

  • Prep Time : 5 minutes
  • Cook Time : 15 minutes

Ingredients

Instructions

red sorrell leaves
1.Wash and dry the leaves in a tissue paper for sometime.

2.Saute the leaves well till they change their color,a sour smell will come out of it.Then remove from fire.Let it cool.

3.Add some oil and roast the given ingredients one by one then remove from fire and let it cool.

4.Now in a blender grind the ingredient coarse,then add the gongura leaves that was sauteed and kept separate and blend them again.Do not grind it like paste,beat them 90% .It will taste yummy when the leaves are present here and there while eating with rice.


5.Now pour some oil liberally(yes at least 5 tsp,this will keep gongura fresh for a week and wont get spoiled)do the seasoning one by one,seasoning item is very important because this only gives that crunchiness to gongura.

6.This taste good with hot steamed white rice.My all time favorite ready mix.This kept in fridge will stay for 4-5 days.
