Beetroot Poriyal/Beetroot Fry
Beetroot is my favorite vegetable next to potato.I use to stuff this into a cup and eat it separate like a snack when I was a kid .I used to like it that much I don't know y but I just love it.I have seen kids rubbing it to their lips to make it pink like lipstick I use to do it too when I was a kid,lot of good memories with it.

Ingredients
- Beetroot,grated - 2 cup
- Onion,finely chopped - 1
- Coconut,grated - 4 tsp
- Garlic - 2
- Green chilly - 5
- Red chilly powder - 1/4 tsp
- Salt to taste
- For Seasoning
- Mustard seeds - 1/4 tsp
- Urad dal(ulandham paruppu) - 1/4 tsp
- Curry leaves - as per requirement
- Grind&paste(without adding water)
- coconut,grated - 3 tsp
- Jeera - 1 tsp
- Green chilies - 3-4
- Garlic - 1
Instructions
- Peel the skin of the beetroot and cut them half and grate them well.
- Blend coconut,jeera,garlic,green chillies together without adding water keep it separate.
- Heat the kadai/pan and pour some oil start doing the seasoning like mustard,urad dal,curry leaves,hing.
- Now saute the onion for a minute,now add the grated beetroot and saute for few minute then add salt &red chilly powder, close the pan with a lid and let it cook for 5-10.
- Remove from fire& mix the blender items like coconut,garlic,green chillies,jeera to the beetroot poriyal.
- Serve them hot with sambar,rasam.
