Broccoli Cream Soup
Broccoli is one of the best and healthiest vegetable.I know many of them don't like it especially kids.I see parents fighting with their kids to feed this since its very healthy,but you know what my kid goes crazy for it.she can't resist the temptation.Its her favorite veggie.So I saw some fresh broccoli in the market and thought I could try the soup she might enjoy and voila!!!! she loved it she not only had her cup but finished my cup too and she still wanted more.So this soup was a definite hit and my in-laws were here too and everyone enjoyed this healthy creamy soup.

Ingredients
- Butter/Olive oil - 2-3 tsp
- Onion,finely chopped - 1
- Carrot - 1/4 cup
- Celery - 1/4 cup
- Broccoli - 1 cup
- Spinach/Palak(optional) - 4 tsp
- Pepper powder - 1/2 tsp
- Salt to taste - as per requirement
- Bay leaves - 4
Instructions
1.In a pan pour some butter saute bay leaves along with onions,carrots and celery.Stir them till they are soft and translucent.(you can add any veggie to your liking)for the vegetable stock purpose.
2.Pour 1-2 glass of water and cook them in a cooker for 5 mins.Let them cool .Then keep the water and vegetable separate.Now remove the bay leaves and throw it away.In a blender blend the vegetable and using a strainer filter them and keep the pulp separate.Remember we have water(vegetable stock) and pulp ready.
3.Now melt 1/2 tsp of butter in a pan and saute broccoli florets for few mins till the raw smell is gone.Then add some spinach(optional)I like to add spinach because this soup is my daughter's favorite and so I try to make it as healthy as possible.Then transfer it to the cooker and steam them with the vegetable stock water and let it cook for 5 mins.
4.Now let it cool.Then blend them well and strain them.Now in a pan add butter(I know too much butter right??? don't worry over all you are going to add 2 tsp max if you want to substitute add olive oil instead of butter)then add both vegetable pulp and broccoli pulp and stir for a min.Add pepper powder & salt according to your liking.
5.I chopped & fried some small broccoli florets in olive oil and used them for garnish.They tasted heavenly hmmmm yumm yumm.You can also add fried bread pieces.Serve it with some pita chips or just plain.Everyone enjoys it at my place and my kid loves it.
