Banana Nut Muffin(Eggless)

Muffin and me are very apart.They were never appealing to me until one day I tasted this yummy banana nut muffin.I had some ripe banana lying in my kitchen for nearly 4-5 days and they were completely ripe so no one felt like eating it.I dint really have the heart to throw it so I jumped in to make my version of banana nut muffin.I didn't have walnut.I had few hazel nut so thought of giving a try with it.You can use any nuts be it almonds,pista(pistachio),cashew anything.feel free to use your own choice of nuts.I added few pinch of ground cinnamon to add a punch to the banana and I am glad I used it.When the muffins were getting baked my whole house was filled with that yummy aroma.I am not a big fan of regular white sugar in my muffin so I always use lite brown sugar but you can use white sugar too.People who use egg can directly add egg to this and work gets done more simpler.Well enjoy this yummy BANANA NUT MUFFIN with your family and friends and they are very easy to make.

1.In a bowl take 2-3 bananas and mash them to pulp.To this add some regular sugar or brown sugar.I have plenty of them in my cabinet so I used brown sugar.I like brown better than white sugar.

2.Now stir them well in banana.I used 3/4 cup of sugar for 2 bananas.

3.I used Hazelnuts.I had some sitting in a bottle for a month so I thought let me make use of it.Traditionally they use walnut but feel free to use any nuts.Even almonds or pecans would taste good too.If you want to make it more interesting use almonds,Pista(pistachio) together and add to this.

4.Now to the ripe banana pulp add this nuts and mix it well.Add a tsp of vanilla essence and mix it well.

5.Now coming to the powder substances.Take 1 cup of all purpose flour and sieve it well.To this add baking soda,baking powder and ground cinnamon powder(optional). My family loves a pinch of cinnamon flavor to this but if you don't like the smell you can omit it.Personally I feel banana,nuts and cinnamon gives a fantastic flavor together.

6.Now mix the flour to the banana pulp mix and stir it well.Since its egg-less I used 1/4 cup butter(You can use oil too)and 5 tsp of milk and whip it well.Consistency shouldn't be too thick or too thin.When they are semi solid the muffins will come out without any breakage or dryness.So adjust the milk according to it.

7.I had aluminum muffin tray(you can use non-stick tray they are best)I sprayed some oil to it(this helps muffin not to stick to the tray) and placed muffin liner paper(If you are using non stick muffin tray spray on liner too) and poured the liquid inside it.Fill 3/4 batter to the cup.Space should be given to raise so don't pour the liquid fully.Sprinkle some chopped nuts on top of the muffin.

8.Preheat oven to 375 degree F and place the muffin tray inside for 20-25 mins.My muffin got done exactly in 23 mins so keep watching from 20 mins.Pull the tray out and prick a stick inside it,it will come out clean without any dough.That means your muffins are perfect.Then leave it outside to cool down for nearly 15-20 mins.If you try to eat before it either it will be hot or soggy and will stick in your mouth.So let it cool down to 20 mins(it's very important) then perfectly shaped muffin is ready to serve.Look at my banana muffin aren't they a delight???try it on and let me know how they were.

9.I got 10 muffins to serve my family.
