Carrot Rice
Carrot rice is an absolute delight to relish.Being an immense carrot eater I love preparing this dish as my main course.Sometimes I will be in a mood to make rice variety thali so i will wind up doing all possible mixes like lemon,curd,tamarind and carrot rice.Kids will love this mild spiced dish.

Ingredients
- Boiled rice - 1 cup
- Carrot,skin peeled&grated - 1/2 cup
- For Seasoning
- Cinnamon Sticks - 1 small piece
- Cloves - 1-2
- Onion,finely chopped - 1/2 cup
- Dry roast & Powder
- Dry red chillies - 4
- Coriander seeds/dhania - 2 tsp
- Jeera - 1 tsp
- Coconut,grated - 2 tsp
- Groundnut/peanut - 1 tsp
Instructions
- 1. Heat oil in kadai then put cinnamon sticks, cloves,onion let the skin turn golden brown in colour.
- 2. Add the carrot and fry them till the raw smell is gone.
3.Now make powder of all the spice given for dry roasting without adding water.
4.Cool the rice for some time and add it to the mix, sprinkle some salt to your requirement.
5. Now mix the powdered spices in to the carrot rice and leave it on for a minute.
6. Now remove from heat and garnish with grated carrots and serve.
7.This dish can be eaten with chips/papad.
