Coriander Rice

I love any kind of mixed variety dishes, not only they are easy to make but they taste really good. Best for lunch box or when you are not really in a mood to cook. I love this coriander rice a lot. They are very flavorful and taste awesome with a drop of ghee on hot rice.  They pair very well with papad or raita. It can be made in 10 mins. Bachelors easy access dish. Kids will like it too when made with less spice. Now lets start preparing coriander rice.

1. In a pan add oil/ghee and do the seasoning mentioned above, to this add onion and saute well. To this add cashew nuts and saute them too.

2. Now in a mixie add coriander leaves,ginger,salt and green chillies. Blend them to paste. Add little water(1-2 tsp) if necessary.

3. Now add the coriander paste to this and saute well for few mins till the raw smell is gone. Then to this add cooked rice and mix it well. I personally recommend to use basmathi because the flavor is very good but you can use regular rice too. Now coriander rice is ready.

4. Now serve it with colorful papad or raita its will taste really yum.
