Corn Chat
Another simple chat that can be prepared in 10 mins for your evening snack.I love the combination of the deep fried corn crunch and the freshly chopped onion mix.When they both combine they taste so good.I keep changing the mix in them according to my mood.Feel free to add groundnuts,mangoes or even puffed rice.They will taste so nice.I remember our roadside guys doing this in no time.I have seen few adding chopped raw mango pieces instead of tomatoes and lemon juice.I find that taste little over whelming so I dont usually add it, but dont listen me try it out.You may like it.

Ingredients
- Sweet corn kernels - 2 cup
- Maida flour/All purpose flour - 2 tsp
- Corn flour - 3 tsp
- Salt - 1/4 tsp
- Red chilly powder - 1/4 tsp
- Onion,finely chopped - 3/4th cup
- Tomatoes - 1/2 cup
- Lemon juice - 1-2 tsp
- Chat masala - 1/2 tsp
- Coriander leaves,finely chopped - 3 tsp
Instructions
1.Boil the sweet corn for 5 mins,let it dry little bit.I used frozen sweet corn.
2.Now when they are little wet add corn flour,maida,salt,red chilly powder and mix well.If required sprinkle few drops of water.Let them coat the corn well.
3.Now pour oil till the corn can get completely immersed.Add the corn and deep fry them.
4.Use a tissue paper to absorb all the oil present in the corn.
5.Chop onion,tomatoes.Add lemon juice to your required taste.
6.Now mix onion,tomatoes,chat masala, salt and lemon juice.Garnish well with finely chopped coriander leaves.Serve them immediately to get that fresh and crunchy bite at the same time.
VARIATION:
1.You can add chopped green chillies and roasted ground nuts.
2.I have tried adding puffed rice too.It taste so crunchy and chat like.
We make this without deep frying in Mumbai style as follows:
We cook the corn. Add 1 tsp jeera powder, 1/2 tsp sugar, 2 tsp melted butter, salt as needed, 1 tsp chat masala, chilly powder, 1/2 of lemon juice. Finally add some coriander leaves. Just a healthier variation and quick since there is no cutting required making it a quick snack when you have sudden guests.
Yes You are right. I make it too, but that’s the usual corn chat we get in our Chennai malls ,especially in a cup its called “cup corn”. I do that too but I know lot of us don’t know about fried corn so I just shared it here in my blog.I love this crispy corn.
