Cornflakes Cookies

I love this simple yet tasty cookie.I have never really tasted any cookies after coming to USA.Since I am a vegetarian its difficult to grab a cookie that doesn't have eggs in them,but my daughter Joshu loves it.So I am experimenting egg-less version cookies now and this one was a big hit. She loved it not just her but I watched all her friends grabbing it full in their hands and 20 cookies were gone in 5 mins.So mommies out there you should definitely try it out they will LOVE it.This recipe is from my Baking partners Team we made CHOCOLATE ALMOND CAKE last month and this month we had cookies recipe and we had 3 options to pick and I picked Cornflakes cookies since I thought everyone would definitely like it and like I said everyone loved it.

1.Always have a measuring cups when you make cookies or cakes so that the measurements are accurate.I used one full butter tube, always use unsalted butter for cookies.I used all purpose flour and added white sugar.I tried using another batch with lite brown sugar and I must say that really tasted so good than the white sugar.While using white sugar reduce sugar little bit because I found it really sweet.Use vanilla essence,grated coconut,baking soda& powder and all purpose flour.

2.In a big bowl add butter,leave the butter to room temperature for 2 hrs so that its easy to whip creamy.Then add the sugar/brown sugar and beat it with beater nicely till they form a fluffy yellow lite cream texture.Use electric beater for best results if not regular beater will work just fine too.I don't have electric too so I whipped it nicely for 10 mins.

3.Then add vanilla essence and mix it well,to this add baking soda and baking powder and finally all purpose flour and beat it nicely till they are combined well.Beat for 10 mins then put in refrigerator for 15 min so that it easy to roll and ball the cookies.


4.Now take a cup of cornflakes and break them to fine pieces to roll for cookies.Crush them with your hands.


5.Now add the grated coconut to the dough and mix well for a minute.Then roll them like small balls and roll it well with crushed cornflakes.Coat the cornflakes nicely to all the sides.

6.Then take a long tray and cover it with parchment paper/Baking paper sheets(We use this so that the cookies don't stick to paper)Now set the oven temperature to 350F let it pre heat then arrange the cookies on tray with one inch distance so that the cookies have distance to expand.Bake it for 20 mins.

7.Then let it cool for 5-10 mins.Now crispy and crunchy cornflakes is ready to munch.serve it with coffee for evening snacks or just give it to your kids it will be gone in 5 mins.I can guarantee that.
