Cream Of Tomato Soup
Like I have been saying for the past one month in all my post its so damn cold here and I have been making something for brunch pretty much every day. I love soups even though I need a snack to go with all my soup, I leave this as exception. Have you heard of garlic bread well I always love to use that for my soup here. I always have a pack of "Panetini " oven baked bread that has the garlic Parmesan sizzled. If you haven't tried it you must taste it. It's awesome with all kinds of soup. You can make grilled bread or toast bread in oven too but sometimes I love being lazy and just relax. So this really comes in handy. You get this Panetini in all kinds of American shop . I get it from A&P or Stop 'n' Shop.

- Yield : 2-3 person
Ingredients
- Ripe Tomatoes - 4-5
- Carrot - 1/2 cup
- Beetroot(small piece) - 1/4 cup
- Onion,chopped cube - 1 1/2
- Unsalted butter/Olive oil - 4 tsp
- Garlic ,crushed - 5-6
- Bay Leaf - 2-3
- Corn Flour - 1 tsp
- Milk - 4 tsp
- Salt - as per requirement
- Crushed Pepper Powder - 1 tsp
Instructions
1. In a pan add butter then saute bay leaf,onion,garlic,carrot,beetroot and saute them fine. To this add tomatoes and saute till they get soft.
2. To this add 2 cups of water and boil them for 5-10 mins. Let them cook well. Now let it cool,remove the bay leaf and then grind them to paste in a blender and filter them .
3. Now in a pan add little butter and pour the tomato paste in them and let it cook for few mins. Add more water if required. Then in a small cup add corn flour to the milk and dilute it well. Add it to the soup to give thick thickness and enjoy this with a garlic bread or toasted bread. Add more pepper powder if required.
4. Very simple to make and very tasty to eat for this winter times. You can fry some bread pieces in butter and add to the soup.
