I know for sure regular visitors to this site would have noticed A-Z blogging Marathon is going on and this is my 3 rd day and I have recipe on Street Food Category. This marathon was started by srivalli for a very long time and its a big success and fun oriented competition in our blogging world.  Cutlet are everyone's favorite and its found everywhere in India. The green sauce and tomato ketchup is served with this spicy yum cutlet and enjoyed from kids to elder people. Its very quick to make and can be done in long batches and stored in refrigerator for parties or when  guest visits. Very tasty and very simple to make.

  • Yield : 4-5 person

1. Boil finely chopped carrot,beans,peas well in microwave for 5 mins. Then let it cool, now whip in wiper for a min till they slightly get mashed and keep it separate.

2. Now in pan add some oil to this add cashew nuts,jeera,ginger garlic paste,onion one by one and saute it well. In a separate bowl boil the potatoes,peel the skin and keep it separate.

3. Now add turmeric powder,chilly powder and coriander powder. Saute them till the raw smell is gone to this add the mashed vegetables and sprinkle salt in it. Toss for few mins.

4. Now add the mashed potatoes and remove from fire. To this add lemon juice and finely chopped coriander leaves. Let it cool completely.

5. Now take maida in a bowl and add water to it. Dilute in such a way that it shouldn't be too thick or too thin, just perfect for coating. Spread bread crumbs in a bowl too.

6. Then make a ball out of the vegetable and press in center to make it little flat. Then coat in maida mix and immediately roll it well with bread crumbs. Make all the veggies this way and keep it separate.

7. Now heat pan or kadai and pour oil till the cutlet can be deep fried. Then when the oil is hot enough deep fry them well on both sides. It should be mild brown in color don't over fry. Serve this with green chutney or sauce and serve it hot for guest and friends.

Note:

  • Coating with maida is very important otherwise the cutlets will not be firm.
  • Rolling in bread crums is very important because it will absorb less oil and hold the shape.
  • See to it that the veggies are not moist, it should be dry so rolling them will be easy and will absorb very less oil.
  • If by any chance the veggies are moist add maida or bread crumbs inside the mix and mix it well.
  • Deep fry to mild brown in color on both side. Oil shouldn't be too hot.
