Khandvi- Gujarati Farzan
I have been lately learning many regional food recipes from a wonderful group called SNC(South vs North group).It's a beutiful set of friends who are from all over India and help each other making their regional food recipes. I have enjoyed every bit of their recipes. Most of them I have eaten in shops but I have never made it, this group helps us learing such wonderful recipe. The brain child of this group is DIVYA PRAMIL of You Too Can Cook and each month we get recipes from the north team and we south team would do the same. This time HETAL from Gujarati Zaika has given us this wonderful recipe and I loved doing it. Thank You Hetal for such a lovely recipe.

Ingredients
- Besan gram flour/kadalai mavu - 1 cup
- Curd/Yogurt - 1 cup
- Turmeric powder - a pinch
- Salt - 1/2 tsp
- Asofaetida(hing) - a pinch
- Ginger & Green chilly paste - 2 tsp
- Lemon Juice - 1 tsp
- For Seasoning:
- Oil - 1 tsp
- Mustard seeds - 1/2 tsp
- Seasame seed(White) - 1/2 tsp
- Green chillies(finely chopped) - 1 tsp
- Curry leaves - 1 tsp
- Dry red Chillies(broken) - 2-3
- For Garnish:
- Grated coconut - 3 tsp
- Coriander leaves,finely chopped - 3 tsp
Instructions
1. Sieve besan flour well and transfer it to a bowl. To this add curd and mix it well. Add turmeric powder,hing,salt and ginger-chilly paste. Mix it well so no lumps are formed. I filtered them in filter so that ginger-chilly are not found in pieces.
2. Now heat a pan and transfer the mix and stir it well. Stir till it becomes thick it may take 7-8 mins. Then when its done, take a plate and spread the dough thinly on a plate quickly when it is still hot. This has to be done quick. I had kept 4 plates and spread them real quick. Use back of spoon to spread it even and thin.
3. After 2 mins cut the dough straight to 1 inch wide STRIPE and in center. You will be able to make roll that shows the dough is made just right. Roll them tight and place it on a plate. Do all of dough the same way.
4. Then heat oil in a pan and do the seasoning mentioned above and pour it evenly on top of this roll. Finally garnish it with grated coconut and finely chopped coriander leaves.
5. This Gujarati delicacy is a must taste recipe. Enjoy it with a hot tea/Chai.
