Vadai is very famous dish around India.No matter if they are from North or South everyone drools over it.I have added Dahi vada/Curd vadai in my site but its a North Indian version,Sorry not a big fan of South Indian type.But I love sambar vadai very much.But to make all this variation we have to first know how to make a decent vadai.we cant be experts but we can always try to show like we know how to make it.I had such difficulty getting that round thick fluffy vada few came out well but few missed their shape little bit,well  I was in a hurry so......(hehehe see how nicely I lie)

Instructions


1.Soak urad dal for 2-3 hrs and make a fine dough out of it using a blender.Add little water if required dont add more than 1/4 glass.

2.Now finely chop onion,green chillies,curry leaves,pepper and mix it well to the dough.Now add little salt and keep mixing it well.

3.Now heat oil in kadai till the vadas get immersed completely.Take little water in a small cup.Dip your hands in them and then roll the vada dough like balls in your hand and put a hole using your thumb finger and roll it carefully inside the oil.

4.Keep the stove flame to low while dropping the vada once they are all in you can increase the flame to medium high.Wait till they turn golden colour on both sides till then keep rolling them to the other side.
5.Serve this yummy vadai with coconut chutney & sambar.
