Methi Paratha
Methi is a very healthy green veggie. South indian don't really use it much may be in few stuff but North Indians use this in lot of their dishes even in Raitas. They are very good for heath methi/fenugreek leaves help in removing toxins from our body and its help in cooling our body its very healthy.

Ingredients
- Whole Wheat flour - 2 cup
- Fenugreek leaves/Methi leaves,finely chopped - 1 cup
- Onion,finely chopped - 1/2 cup
- Jeera - 1 tsp
- Green chiilies,finely chopped - 2 tsp
- Ginger,chopped fine - 1 tsp
- Garlic,finely minced - 1 tsp
- Turmeric powder - 1/2 tsp
- Amchor powder/dry mango powder - 1/2 tsp
- cumin power,roasted - 1 tsp
- Pepper powder - 1tsp
- Salt to taste
Instructions
1. chop the methi in to fine pieces and mix 1/2 tsp of salt in it .This will remove the bitterness in methi leave it for 5 min.
2.Now finely chop onions,green chillies,ginger,garlic.Heat oil in kadai/pan and saute the mentioned stuff till they are cooked.Now add the methi and fry them till the raw smell is gone.
3.Now add roasted jeera powder,amchur/dry mango powder,pepper to the masala and mix it well.
4.Now remove them from fire and let it cool for sometime.
5.Mix the methi to wheat flour adding little water until the form a nice & soft chapathi like dough.
6.Now roll them like balls and make a round paratha.Now place them on pan and cook them on both side till they turn golden in colour.
7.Serve this with 1/4 tsp ghee on top along with carrot raitas.
Addition of ajwain gives it a very good flavor too.
