Tomato Rice
Tomato rice is a very simple dish.Its easy and quick to make.I know I don't have to load this simple recipe but keeping bachelors in mind like my brother who is away from home thought this kind of quick dish might help them.This paste can be made in large bulk and can be stored in fridge for 2 days(well I am talking to bachelors here)others can make it fresh.

Ingredients
- Boiled rice - 2 cup
- Onion,finely chopped - 2
- Tomato - 4
- Green chillies,long slit - 5
- Garlic flakes,crushed - 2
- Turmeric powder - 1/4 tsp
- Chilly powder - 3/4 tsp
- Salt - as per requirement
- Freshly chopped coriander leaves - 1/2 cup
- For Seasoning:
- Mustard seeds - 1/4 tsp
- Urad dal(ulandham paruppu) - 1/2 tsp
- Channa dal/kadala paruppu - 1/2 tsp
- Curry leaves - as per requirement
- Jeera/Fennel seeds - 1/2 tsp
- Asofaetida(hing) - a pinch
Instructions
1.In a kadai/pan add some oil then do the seasoning step by step and saute them well.Then add onion,green chillies and garlic saute till soft then add tomatoes and fry till them well.
2.Then add turmeric powder,chilly powder and salt.Let the raw smell leave.Then add little water and cook for 5 mins.
3.Now add the boiled rice and stir till they combine well with rice,few like to sprinkle some ghee to this,feel free to add.Then add the chopped coriander and garnish it well.
VARIATION:
1.You can add garam masala if required.
2.For garnishing add cinnamon,cloves,bay leaves too.
