Rava Upma
I was never a big fan of upma during my childhood but now I think I have started to like it because its healthy and quick to make there's lot of variation that can be done but this one is simple yet tasty.I like the blend of rava and ghee so I usually add a spoon of hot ghee to the upma just before serving.

Ingredients
- Rava/sooji - 1 cup
- Onion,finely sliced - 1
- Tomato,finely sliced - 1
- Green chillies,long slit - 6
- Ginger,grated - 1 tsp
- Carrot,finely chopped - 3 tsp
- Beans,finely chopped - 3 tsp
- Oil - 2 tsp
- Ghee - as required
- Salt to taste
- For Seasoning
- Mustard seeds - 1/2 tsp
- Urad dal(ulandham paruppu) - 1/2 tsp
- Channa dal/kadala paruppu - 1/4 tsp
- Curry leaves - as required
Instructions
- Dry roast the rava/sooji in a pan till the turn lite brown in color.keep them aside.
- Now heat the pan to medium high and pour some oil add the seasoning once the mustard seeds splutter add urad dal, channa dal/kadala parupu,curry leaves and fry for a minute.
- Add onions saute till they get tender then add green chillies & fry for a minute.
- Add tomato,carrot,beans and let the skin get soft and mushy now add 3 glass of water and let it boil .
- Now add hing ,salt& ginger let the essence mix into the water once the water starts to bubble add the roasted rava/sooji keeping the flame to low.
- If flame is high chances of forming lumps is possible so reduce the flame and gently mix the rava to the water.
- Now keep stirring until the rava/sooji is cooked.Now garnish with fresh coriander leaves & cashew nut.
- Just before serving sprinkle some ghee and serve hot.
NOTE:
- Usually up ma is made without adding any vegetables just onion and green chillies will be added but I like adding veggies.
- You can use coconut oil too for seasoning its heavenly.
