Carrot Kheer-Diwali Special
I was feeling so down on Saturday and I felt like drinking something that feels little heavy yet cold and tasty. There was 2 bags of carrots in my fridge and my daughter goes crazy for dish that has carrots in them. She just loves it. Kheer is definitely healthy and there was one tin of condensed milk left too so a "bulb" lit up inside my brains why not make carrot kheer that would be so yummy??? right??? It was ready in 10 mins but I didn't feel like drinking it hot because I hate the raw milk smell. So I let it chill for some time and they tasted soooooooooo good. You guys must try it too, it was awesome and I am sure it really comes handy when you are expecting some guest in few hours. Just make it and chill it, they will love it too.

Ingredients
- Carrot - 1 cup
- Milk - 2 cup
- Sweetened condensed milk or Sugar - 1/2 cup
- Badam/Almonds,finely chopped - 2-3 tsp
- Pista/Pistachios - 2 tsp
- Cardamom powder(Elachi) - a pinch
- Raisins/Kismis - 1/4 tsp
- Ghee - 2-3 tsp
Instructions
1. Boil the carrots for 5 mins in a microwave or pressure cook them for 2 whistle, then let it cool and make a fine paste of them in a blender.
2. In a pan add ghee then add the carrot paste and fry them for 2 mins till the raw smell from carrot is gone. Then in the same pan add 1 tsp of ghee and fry the almonds,pistachio(slice them to small pieces). Now add raisins let it fluff then remove from pan.
3. Now in a pan add milk and simmer them for 10 mins. I didn't add sugar because I had condensed milk in hand but if you don't have it just add sugar and continue with the recipe. To this add carrots and the nuts. I love to get little pieces in my mouth but if you don't like it paste them all and filter them and add to the milk.
4. Let it boil for 5 mins,to this finally add condensed milk and stir for 2 more mins then remove from fire. Let it cool and keep it in fridge for 1 hr.I find it tasting really good when it's served chilled.
5. Enjoy the healthy and mouthy watering kheer.
