Cauliflower Soup
We all love cauliflower be it from stuffed chapathi to curries, cauliflower pakoda to manchurian. Its all time fav vegetable here. I had long back adapted this cauliflower soup recipe from THE PIONEER WOMEN recipe catalog, it looked very simple and tasty. So i thought of trying it and it kind of tasted well too. So here I am sharing my explored recipes from book magazine. Do try it out kids will def like it. My daughter is quite picky when it comes to food but she herself loved it very much.

Ingredients
- Cauliflower,chooped cube - 1 cup
- Carrot,cut in to small piece - 1/2 cup
- Celery,cut in to small piece - 1/2 cup
- Onion,finely chopped - 1
- Butter - 2 tsp
- Bay leaf - 2-3
- Corn Flour - 3-4 tsp
- Milk - 1 glass
- Mixed shredded cheese - 1/2 cup
- Salt & Pepper - as per taste
- Fresh or Dry Parsley Leaves - 2 -3 tsp
- Croutons(Cheese &Garlic) - 1/2 cup
Instructions
1. In a bowl chop all the three ingredients like cauliflower,carrot, celery to small pieces and wash them well and keep it separate.
2. In a big sauce pan add butter,once it melts add bay leaf. Let the flavors get infused well with butter. Then remove the leaf and keep it separate. To this add onion, saute for few mins. Then add cauliflower,carrot and celery. Stir for few mins.Now add 2 glass of water and let it boil and veggies cook for 10 mins.
3. Now add dried or fresh parsley leaf and let it cook for few more mins. In a separate bowl mix corn flour and milk without any lumps. Add to this soup.
4. Now let it cook for few more mins. Keep stirring until it gets little thick. Now add salt and pepper. To this add mixed cheese and stir it well again. Once the cheese blends well in to the soup, switch it off.
5. Now add croutons of your choice to this soup. I added garlic cheese variety. But you can use your own preference. Serve it hot to your family and friends. Mild yet filling cauliflower soup is ready.
