Italian Peas Basil Soup
I made this recipe seeing food network from Giada. I just love her program they are so good but I have altered quite a lot of items like cauliflower and fried onions. It was so filling and very good for tummy. I loved having it for dinner with some roasted bread. My kid loved it too. I had few guest over that day and all of them loved it very much. It was def a winner and its very healthy. I love basil in my soup. If you knew my site well you would know my love for basil. I love that leaf flavor a lot.

Ingredients
- Peas - 1 cup
- Broccoli - 1/2 cup
- Cauliflower,florets - 1/4 cup
- Onion,finelly chopped - 1/2 cup
- Garlic - 4
- Fresh basil leaves - 1 cup
- Bell peppers/Capsicum - 1/2 cup
- Fried onions - 1/4 cup
- Butter/Olive oil - 2-3 tsp
Instructions
1. In a pan add butter/olive oil and add onion,garlic and saute for a min.To this add peas,cauliflower,broccoli and basil leaves. Then add 2-3 cups of water and let it boil for 5 mins. Then let it cool and grind them to paste and filter it in a strainer.
2. Then in a pain pour the soup and let it boil for 5 mins.
3. I had some ready made fried onions,add them to this hot soup. Stir it for a min and switch it off and remove from flame Then in a separate pan chop the red capsicum and saute in olive oil and add it to the soup before serving in a bowl.
Flavory yummy soup
Adding basil leaves to soup definitely a hit. I love all the vegetables that you have added here. Looks really yummy.
