Baingan Bharta(Smokey Mashed Eggplant Curry)

This Eggplant curry is traditionally done by roasting them on grill or straight away roasted on stove.They give a mild smokey smell to the dish,a charred flavor.They get mashed completely and the dish taste very mild.Eggplant lovers will love this dish.I used Italian Eggplant but we can use regular brinjal too.Just roast them on stove turning to all sides.Enjoy the dish with Naan or Chapathi.

Instructions

1.Rub some oil on brinjal, if using regular brinjal try adding little oil and burn them on all sides by turning it carefully.I have used Italian eggplant here and have grilled it in oven for 20 mins at 450F.

2.Before placing the eggplant in oven,cover the tray with aluminium foil and spray some oil.Then place the eggplant on tray and slit them in few places and leave it in broil mode for 25 mins.Check if the skin is nicely burned.

3.Remove from oven and let it cool then slowly discard the skin and throw away.Chop the brinjal with knife,it will be mashed so don't pulp it more.In a kadai pour some oil add jeera saute them for a min then add onion,ginger,green chillies and garlic and saute for few more mins.Then add tomatoes and fry till the skin is nicely cooked.

4.Then add salt,turmeric powder,red chilly powder,garam masala and add little water and let it cook nicely till the raw masala smell is gone.Now add the mashed brinjal to this curry and stir it well .Let it cook for 5-10 min until some oil oozes out.Then garnish with freshly chopped coriander leaves and serve it hot with chapathi or Naan.
