Kashmiri Dum Aloo

Dum Aloo is a very delicious dish made from baby potatoes.This dish origins from Punjab.I just love the rich creamy cashew nut mix in it.This dish goes well with Butter Naan,Chapathi or Roti and Jeera rice.I never miss to make this dish whenever I see small potatoes in store.It taste little bit sweet due to the addition of honey.Traditionally honey is added but its up to us to add it. I have omitted the honey because I like it spicy.Try out the Punjabi way of dum aloo and let me know how they turned out.

Instructions

1.Wash and wipe the potatoes dry.Prick them using a fork twice on each side.Then pressure cook them(it should be half cooked)dont peel the skin this taste better(well I like it that way)

2.Heat the kadai/pan and pour some oil and let it get hot.Now add the baby potatoes to this oil and deep fry them till they turn crispy and golden brown in colour.keep them aside.

3.Now heat butter in kadai/pan once they melt add some jeera let it fry for a sec then add 1 onion saute them well.Leave the other half onion for paste.

4.Add ginger garlic paste and saute them for 2 more min until the raw smell disappears.

5.Mean while in a blender add 1/2 of the onion,tomatoes,cashew nut and grind them well.Add little water and make them a fine paste.

6.Now add the paste to the mix and let it cook for 5 mins.Now add turmeric pow,chilly pow,garam masala,elachi powder and salt.

7.Let it cook for few more mins say at least 10- 15 min add more water.Keep stirring otherwise the gravy will get burnt.Once it starts to bubble up and the oil starts to ooze out add baby potatoes and let it cook for 5 more mins.

8.Now remove it from fire.Garnish it with coriander leaves and serve it hot with naan or roti.
