Masala Milk/Masala Paal

In Chennai this masala milk is very famous in "Saravana Bhavan". When I tasted it first time I totally fell in love with it,felt so relaxing and  refreshing.I like the flavour of all that spices in my milk.Since then I have started making this very frequently in my house.Its best during winter times,what would go better than a hot spiced milk for a freezing temperature.I have heard from my mom that it gives a very relaxing sleep when consumed during night time & cures headache and cold.So I try to make once in 2 weeks at least.

  • Prep Time : 5 minutes
  • Cook Time : 10 minutes
  • Yield : 2-4

1.Soak badam & pista in warm water for 10 mins.Then peel the skin and grind them to fine paste.

2.Now take the required cinnamon,elachi,cloves,ginger,pepper,saffron to add to milk.

3.Boil 2 cups of milk in a pan and then add all the above mentioned ingredients except saffron and let it boil for 5-10 mins.Then add the badam & pista paste too and keep stirring.

4.In a bowl take 4 tsp of milk and add a few strands of crushed saffron and leave it for 2 mins let it dissolve,this will give a mild yellow colour and a wonderful saffron flavour to milk.

5.Now add some sugar and keep stirring for few mins then filter the milk so that the pepper,cinnamon and all the other stuffs are filtered and only the flavour remains in milk.Then heat it back and add saffron milk to the this milk and keep stirring.

6.I added 2 tsp of badam & pista pieces separately to this hot milk and removed from fire.Serve it chilled or hot.I like it hot so I served it with snacks in the evening.
