Mini Apple Pie

I have been very happily participating in one of the group called BAKING CHALLENGE GROUP and this is my 6th challenge and I am very happy to participate and do this with this excellent group. I had always imagined that doing a pie is lot of work, but to my surprise it took me very less time to  make it and I was very happy with the finished product. The crust was crunchy and the inner apple had the perfect sweetness and it was soft inside. I have always heard that this pie goes very well with Ice Cream but unfortunately I didn't have anything in my fridge so just plain pie was itself satisfactory enough. Here it is to all the APPLE PIE lovers!!!!

1. In a bowl sieve all the mentioned powders like all purpose flour,soda,salt,sugar and keep them collected in a bowl. To this add the cold unsalted butter don't let it sit in room temperature it has to be cold, then shred them or cut them in to small pieces and mix them nicely.

2. Add chilled water to the dough and use little by little and mix them well like tight dough not too stiff or hard but soft and tight. Then divide the roll to 2 sizes one bigger dough and another smaller dough. Wrap them both in a plastic wrap and let it refrigerate for nearly one hour in fridge.

3. Meantime remove the skin of the apples and chop them to small pieces. I have done it this way because I used mini muffin tray for the apple pie, if you like to do it in a pie pan then slice the apples to 8 slices.

4. In a pan add unsalted butter and sugar(I always powder the sugar in blender)and when they melt add apples and saute them well for 2-3 mins. To this add Cinnamon powder,nutmeg and mix them well. See that maximum of water is absorbed while sauteing it. Remove from fire and let it cool for few mins.



5. Now remove the dough from fridge and take the bigger dough and roll it like chapathi not too thin or too thick. Then take a cupcake tray and spray some oil inside it so that the dough doesn't stick to it.

6. Now nicely place them inside the pan as shown in the pic. To this fill the apple filling.

7. Now take the smaller dough and roll them again like chapathi and cut them long as strips as shown in the pic. Now cover them nicely on both the ends. Seal them properly at the edges otherwise it might break. So seal it by brushing it with milk that would give a nice golden brown color to the pie crust.



8. Now pre heat the oven at 350 deg F and bake it for 35-45 mins. Mine got done in 35 mins. So keep an eye on them. This will yield 8 mini apple pie. Enjoy it with a double scoop of vanilla ice cream.
