Paal Kova(Traditional Way)Diwali Special

I have 2 big fans for this Paal kova one is my hubby and the other one is my little angel Joshu they love this sweet so much. I have always ignored making this sweet thinking its waste of time and gas because it consumes so much attention and you can't just leave the sweet and move away. You have to keep stirring and I am not a great fan of it but then its "Diwali" so I thought let me have some festival spirit and  make it and I was glad when I made it. I remember the happy face from my hubby and my daughter its like I have never fed them food before, they were on to it completely. They both loved it and while I was making this long process traditional sweet I was trying out the microwave version too. To my surprise it only took me 10 min can u believe it???? wow that was real fun.

I have attached the quick microwave version here so click it if you don't want to stand for hrs in kitchen. Its called "Thirati paal" in Tamil it had a nice paneer kind of texture and was definitely tasty.

1. I used heavy bottom vessel to make this because this process helps in making it quicker and its easy to stir. I used 4 cups of milk and started stirring in medium temperature.

2. Add sugar after 20 min when the milk starts to reduce then keep stirring for another 10 min. I added elachi powder when it was getting little yellow in color. Now we should carefully handle the stirring because when the yellow stage comes the milk starts to get thick like semi solid form and tend to burn at the bottom if not stirred continuously.

3. After 45 mins of stirring I got the required consistency and stopped stirring. Now transfer it to a bowl and let it cool for 5 mins. To this add chopped almonds and pista and serve it hot or cold(It taste best when its cold so store it in fridge and serve it after 1 hr)
