Palapalam Payasam(Jack Fruit Payasam)

By October 2, 2012

My hubby bought a whole bulk of jack fruit last week and it was too much to eat.I would feel bad if they go to waste so I made this payasam in the evening. It was raining outside and it was soooo cold.So I decided to make some hot payasam and this jack fruit payasam was so divine and they filled the house with that aroma.I made this payasam similar to my moong dal payasam(Pasi paruppu payasam)but little alteration here and there. On auspicious days like Vishu this payasam is made by Kerala people. Its a very special food made as a offering to god.

Ingredients

Instructions

jack fruit
1.Nicely peel and wash the jack fruit/Palapalam.

2.Now chop them to thin pieces or small pieces. In a pan pour some ghee and fry the jack fruit well for 2 min till they get tender.

3.Now in a separate pan pour some water let it boil then melt the jaggery well for 2-3 mins, once they get completely dissolved filter them well in a strainer and keep it separate(sometime we can find some mud's in them so its always safe to filter it)

4.Now add this jaggery water to the jack fruit and let it cook for few min.To this add elachi(cardamon powder) and stir it well. Now keep the water separate and jack fruit separate let it cool down for a min. Then beat them well or 3/4 th in the blender and add it back to the pan.

5.To this add coconut milk and stir for a min.In a separate pan add some ghee and roast coconut cut pieces and cashew and add to this payasam.Stir till the consistency of payasam is required and remove from fire.

6.Serve it in a bowl hot and enjoy the divine payasam. The crunchy cashew and coconut gives an extraordinary flavor to this payasam.Addition of coconut milk enhances the jack fruit flavor.

I’ll definitely try this one. I always make jackfruit as a gravy dish. I’ve eaten jackfruit icecream a few times though. I think the sweet notes will go well with it. Thanks for the recipe.
