Paniyaram Chutney
This chutney is best for paniyaram, they do pair well with idly and dosa but I personally love it with kara paniyaram. It's really quick to make and it taste awesome. Small onions,garlic and tomato are the main ingredients in this, the flavor is very subtle and they taste fantastic. This chutney is quite famous in Chettinad area and its heavenly when you have it during cold season hot paniyaram and this chutney is so yummy..

Ingredients
- Dry red chillies - 5-8
- Small onions,chopped fine - 1/2 cup
- Garlic - 3
- Tomatoes - 3
- Tamarind,little bit - a pinch
- Asofaetida(hing) - a pinch
- Salt - as per taste
- For Seasoning:
- Oil - 2 tsp
- Mustard seeds - 1/4 tsp
- Urad dal(ulandham paruppu) - 1/2 tsp
- Curry leaves - 2 tsp
Instructions
1. In a blender grind dry red chilly,garlic and small onions together. Grind them little coarse.
2. Now in a pan add some oil and do the seasoning mentioned above then add the onion,garlic,chillies paste to this and saute till the raw smell is gone. say saute for a min or more.
3. Now in the same blender grind tomatoes,tamarind and salt to fine paste and pour on this onion mixture. Together let it get sauteed till the raw smell is gone. Then add hing and mix it well. Once the oil bubbles up on bottom remove from fire.
4. Now mix it all and enjoy it with paniyaram.
Wht a coincidence yest for dinner I prepared spicy chutney for dosa wht a flavorful chutney, loved it dear!!!
