Roasted Tomato & Garlic Soup(Italian flavour)
Well its always cold here these days and I have to come up with soup recipes twice in a week. I really feel 2 bowls of soup is definitely filling for a super. My hubby loves soups in any form and so does my 4 yr old girl. This soup has a unique feel when u have it, because it tastes a lot like Italian soup. If you just serve it with little cheese spread on top in a bread bowl it becomes an authentic Restaurant served Italian Soup. Everyone at home enjoys this delicious soup hope u enjoy it too. The garlic must dominate the soup that's where the fun is

Ingredients
- Ripe Tomatoes - 4
- Garlic - 7-10
- Onion,finelly chopped - 1
- Fresh basil or dry basil - 1/2 cup/3 tsp
- Oregano powder - 2 tsp
- Garlic Powder - 1-2 tsp
- Olive Oil - 5 tsp
- Cheddar cheese,shredded(optional) - 1-2 tsp
- Pepper powder - 1 tsp
- Salt - 1 tsp
Instructions
1. In a pan spray some olive oil around and then place the chopped tomatoes,onion and garlic as whole. Then to this add the fresh basil leaves/dry basil. To this add some salt,pepper,oregano and toss them well adding 3 tsp of olive oil on top. Then place in the oven at 375 deg F and bake them for 20-30 mins or till skin gets tender.
2. Now remove from the oven and let it cool for few mins then blend them nicely in a blender and filter them by adding 1/2 glass of water.
3. Now in a pan add some butter and add the pureed tomato-garlic paste and let it cook for 5 mins. To this I added 2 tsp of garlic powder because the garlic flavor brings out the best taste in the soup. Let it cook for 5 more mins and remove from fire.
4. Now serve it with roasted bread as side and add a little bit of olive oil and mix it well and serve. It taste so heavenly. Kids will love it and its very healthy. The baking gives a strong smell to tomatoes and garlic. To this add some shredded cheese when the soup is still hot and serve it to kids they will LOVE it.
