Stuffed Brinjal Fry/Gutti Vankaya Fry

Gutti Vankaya kura is the stuffed eggplant/ brinjal fry a very traditional delicacy recipe from Andhra.This dish is a dry dish used as a side food for any main course.Gutti Vankai holds an iconic place amongst the entire recipes from the Andhra region.Tender and small brinjals are usually used for this.Few spices are roasted made into powder and is stuffed inside the brinjal, a very unique dish I must say.It can be cooked in tawa or in oven.

  • Prep Time : 10 minutes
  • Cook Time : 20 minutes
  • Yield : 2-4

Ingredients

Instructions

1.Pour some oil fry/roast red chillies,urad dal.channa dal.jeera,garlic,dhania,tamarind,coconut,peanuts separately.
2.Let them cool off then make a powder of them in a blender.Powder them fine.keep aside.

3.Heat oil in kadai pour oil till the brinjals can be immersed completely.Now cut the brinjal from the base end (opposite side of stem) and make 4 slits do not cut it fully just half way through for the filling to fit.
4.Now deep roast the brinjals for a min, remove from fire and let it cool off.
5.Now add 1 tsp water to the powder and make it little thick like paste do not add more water then it will become difficult for stuffing.Push the powdered paste with finger inside the brinjal and cover it well on all sides.

6.Now heat the kadai/pan pour some oil and place the brinjals and let it cook for some time.Keep changing the position till the whole brinjal is well cooked.close it with some lid to cook evenly.

7.Once all the sides are well cooked remove from fire and garnish with coriander leaves.

VARIATION:

  • You can make this same process in oven.Just after stuffing the powdered paste inside the brinjal heat oven to high and place it inside.
  • Spray some oil on the brinjals and put it inside for 10-15 min.Keep checking if they are completely done.

    hey Janani i tried it,it turned out so very well,very tasty di!!!…i always prepare the stuffed brinjal with gravy only,but this recipe like the dry one is very yummy,the best part is … Vasan too liked it,so this gonna be in my regular cuking recipes.thanx :)
