Brinjal Coconut Curry
Me and my sister were talking about what to make for lunch over the phone and all I had left in my fridge was brinjal and she suggested to make this and it's quite a common dish among srilankans. It did taste quite good and different but I liked it. It went really well with rice and everyone loved it.
The frying of brinjal was really nice and they were crispy outside and soft inside. You can try this with dosa,idiyappam too. Its very easy to make and I will be making more of srilankan dish here after. I love coconut milk based recipes who wouldn't love it???

- Cook Time : 15-20 minutes

Ingredients
- Brinjal,long slice - 5
- Jeera - 1/2 tsp
- Onion,finely sliced - 1(big)
- Tomatoes,long slice - 1
- Tamarind paste - 1 tsp
- Turmeric powder - 1/4 tsp
- Red chilly powder - 1 tsp
- Coriander/Dhania Powder - 1 tsp
- Salt to taste
- Coconut milk - 1/2 cup
Instructions
1. Slice the brinjal long then deep fry them and keep separate.
2. In a pan add oil then add jeera let it fry then add onion,saute them well to this add tomatoes and fry them till it gets soft ,then to this add brinjal(remember to slice everything long)
3. Now add tamarind paste let it boil for few mins. To this add turmeric powder,chilly powder,coriander powder and salt. Let it boil for 5-8 mins. Then to this add coconut milk and leave it for a min and remove from fire.
4. Serve this hot with white rice and enjoy the meal.
