Coconut Rice
When you are not in a mood to cook & just want to to rush out of kitchen soon then this dish is your killer choice.Its quick and easy.I love anything that has coconut base so I don't mind eating this everyday too.Good for lunch boxes too.

Ingredients
- Rice,cooked - 2 cup
- Coconut,grated - 1 cup
- Green chillies,long slit - 8
- Cashew nuts,blanched&roasted - 3 tsp
- For Seasoning
- Coconut oil - 2 tsp
- Mustard seeds - 1/2 tsp
- Urad dal(ulandham paruppu) - 1/2 tsp
- Channa dal/kadala paruppu - 1/2 tsp
- Curry leaves - as per requirement
- Asofaetida(hing) - a pinch
Instructions
- Heat oil in kadai/pan add the seasoning items like mustard, urad, Channa dal, curry leaves and hing.
- Then add green chilies and fry for a min then add coconut and roast them till it turns lite brown in colour then add salt to it.
- Pour some ghee and roast cashew nuts separately.
- Now add rice to the coconut mixture and garnish with cashew nuts finally.
- Serve this rice with papad/appalam.
