Vengaya Chutney
This chutney is quickly made and taste good with dosa.I am not a big fan of raw onion chutney but this fry one taste really good.The color looks very tempting.It's a well balanced chutney, the sweetness of onion is balanced by the spice of red chillies and sour taste of tamarind.When you add more oil they stay for more than 2 days without getting spoiled.

Ingredients
- Onion,finely chopped - 5
- Dry red chillies - 8-10
- Tamarind piece - little bit
- Salt to taste - as per requirement
- For Seasoning
- Oil(gingerly oil) - 2 tsp
- Mustard seeds - 1/4 tsp
- Urad dal(ulandham paruppu) - 1/4 tsp
- Curry leaves - as per requirement
- Asofaetida(hing) - a pinch
Instructions
1.Chop onions to fine pieces.
2.In a kadai/pan add little oil then roast the red chillies,do not brown it.Fry them till they are mild brown.Keep it separate.
3.Again add some oil and fry the onions separately till they turn soft and tender.Let it cool.Then combine onion,red chillies,tamarind,salt together and make it a fine paste.Do not add water.Pour them in a bowl.
4.Do the seasoning mentioned above and pour it on top of the chutney.Usually they add raw oil to the chutney on top while serving.They pair excellent with Dosa or Idly.

Really that’s something new to me,sounds good though.
onion chutney,very instant chutney which can be made easily when no vegetables in fridge.looks colourful.
