Sambhar for Paniyaram(Hotel sambar)
This sambhar I had it in one village,they served it with paniyaram it was so simple and they tasted really yummy.I asked that lady how she made it and since then I have been making it at home quite few times.I thoroughly enjoy it.It doesn't have tamarind or dal in it.So use more tomatoes to get good taste.You will definitely love it.

Ingredients
- Small onion - 1/2 cup
- Green chillies,long slit - 5
- Tomatoes - 4-5
- Turmeric powder - 1/4 tsp
- Red chilly powder - 1 tsp
- Coriander/Dhania Powder - 2 tsp
- salt to taste
- Asofaetida(hing) - a pinch
- Besan gram flour/kadalai mavu - 2-3 tsp
- Coriander leaves,finely chopped - 1/4 cup
- For Seasoning
- Mustard seeds - 1/2 tsp
- Urad dal(ulandham paruppu) - 1 tsp
- Fenugreek - 1/2 tsp
- Dry Red chillies - 3
- Curry leaves - as per requirement
Instructions
1.In a kadai do the seasoning mentioned above and saute small onion,green chillies, and tomatoes let it become tender then add little turmeric powder,chilly powder and dhania/coriander powder and salt.Then add 1 glass of water and let it boil for 5 mins,to this add hing and let it cook for 5 more mins.
2.Now in a small bowl mix 2-3 tsp of besan/Kadala mavvu flour and dilute it well.Now garnish with coriander leaves and serve it hot with paniyaram.
