Pumpkin Chocolate Chip Muffin(Egg-less)

Pumpkins......ohhhhhhhh I get goose bumps when I think of it.Why??? well I can only think of scary carved faces made with pumpkins and they are everywhere..... October month is famous for "FALL COLORS" and "HALLOWEEN" and Pumpkin is the queen of this month. Needless to say all my fellow bloggers are busy loading lots of pumpkin based recipe.My BAKING  PARTNERS  decided to make pumpkin based cupcakes and muffins for this month and its so much fun to bake this stuff with all my friends. We were given 3 recipes and there were 2 recipes that really tempted me. I have never tasted Pumpkin in my life and I am glad I tried this. The pumpkin smells so good and my house was filled with amazing aroma. Making cupcake is new to me and I thought they were too sweet. I think I need to take a step back... they tasted fantastic.Everyone should try it and I am sure you would love it.

Instructions


1.Take the required spices or powder items for making muffins like baking soda,baking powder,vanilla essence,nutmeg powder,cinnamon pow,ginger powder,cloves powder and salt.

2.Place butter to room temperature.I always love using lite brown sugar but you can use white too.I have some pumpkin puree(homemade)too kept at room temperature.

3.In A big bowl add the butter and sugar and beat them well for 5 mins till they get fluffy and smooth.

4.To this add homemade pumpkin puree,vanilla essence and whip for 2 more mins.

5.In a large bowl, sift together the flour, baking soda, ground spices, and salt.Sieve them well.


6.Now add the flour items slowly to the bowl and stir it slowly.I added milk now and whipped the well for a min.I stop with my whipping when they reach the ice-cream consistency.I personally feel when they are in this state they never seem to dry or break.The muffin turn out beautiful and so I always whip till I get that creamy consistency.Now to this add chocolate chips and stir it one more time.

7.Now take a muffin tray and place the liner inside,then start filling the muffin paste using a spoon or ice-cream scoop.Fill only 1/4 th space of paste inside the cup,because it needs space to rise and if you fill it with lot of paste then it will break and it will over flow out without getting the proper shape.

8.Now just for extra perk chop some chocolate chips and fill them on top.Now pre heat the oven to 375 degree F then place the tray inside.Let it bake for 25-30 mins(My muffins were done in 25 mins so keep an eye)Prick with a stick in center it will come out clean that indicates that the muffins are done.Now pull them out and let it cool for 20 mins.You will get 20-25 muffins.


9.Now enjoy the yummy pumpkin chocolate chip muffin with your friends and family.The aroma will fill your house and it will be soooooo good.

10.I had few muffin paste left so I added some chopped peaches and prunes and baked them without chocolate chips they tasted fantastic.I made this for my kid and she loved it.
