Thattai is one of the most loved snack in my house. Hubby will be munching it non stop. Yes, it’s definitely addictive but worth it.I make at least 30 of them and they all will disappear in few hours. I Have tried this recipe before using different method and always ended up getting soggy ones. This time I tried from my fellow blogger Raji and nailed it. I have attempted making these thattai 3 times and first two times were super failure. Either I used to make the dough flat & it used to break or it observed too much oil and I wasn’t happy about it.Thank you so much Raji. I know Raji is very famous among bloggers and she needs no introduction. She makes amazing food items and she can make difficult recipe sound so easy even though they are very difficult to make. I love her passion in food. She helps me at all times. Lovely person and  wonderful sweetheart. Thank you Raks I finally made thattai and it was a big hit at home.

Thattai is very elegant snack and its made by my family members very frequently, for some reason I never got it right until now. Whenever I visit India I always get at least 2-3 kgs of thattai. One of my family member make a huge package and I always make sure I ack it in my suitcase and bring carefully without breaking it. Hubby heart would break even if one thattai broke, ya ya he loves them that much. So if you are like me and want to make thattai at home,try this recipe and you won’t have any issue. Careful points to be noted are…always keep the flame low to medium and let both the sides of thattai cook evenly. Do not remove it until the huzzy sounds stops. 1. Sieve rice flour well, then fry urad dal well till they change to golden brown in colour and powder them well,sieve them well. To this add roasted channa dal powder(Blend them in mixie). Mix everything together in a bowl.


2. Soak channa dal & urad dal for 5 mins in warm water. To the flour mix curry leaves,salt,hing,chilly powder,butter,sesame and mix it well. Then add the soaked urad & channa dal. Now add water little by little and make a non sticky dough. Mix it well.


3. Take two plastic zip lock apply oil little bit, then roll the dough to small size and flatten it with a help of thick vessel and press it hard on a ziplock. With help of your fingers make it thin and even. Prick it with small stick so that they don't fluff when put in oil.



4.Carefully take off from zip lock cover & invert it on one hand and drop in hot oil.Cook in medium flame. Heat should not be high, keep in medium low flame otherwise it will get burnt. Same way make every dough ball. Wait till they are completely cooled down and store them in an air tight container.
